As an integral part of the culinary team, the Assistant Banquet Culinary Manager plays a vital role in ensuring the seamless execution of banquet operations at Langham Hotels International Limited.

Key Responsibilities:

  • Support the Banquet Chef in overseeing all aspects of the Banquet Culinary team, ensuring the delivery of exceptional food quality and service standards.
  • Manage the recruitment, training, supervision, and scheduling of the banquet culinary staff, aligning with operational needs and service excellence.
  • Ensure proper receiving, storage, temperature control, and rotation of food products to maintain quality and safety.
  • Report any equipment malfunctions to the appropriate personnel for timely repairs.
  • Conduct daily inventory assessments of specified food items to ensure adequate supply levels.
  • Possess comprehensive knowledge of banquet culinary operations, including food cost management, budgeting, service techniques, forecasting, portion control, and presentation standards.
  • Establish and maintain positive customer interactions throughout all banquet functions.
  • Facilitate effective communication between the executive chef, banquet chef, culinary staff, and banquet team.
  • Collaborate with the catering department to develop customized menus for events and meet with clients as needed.
  • Oversee weekly scheduling, payroll processing, monthly departmental meetings, and participate in weekly BEO/Pre-con meetings.

Qualifications:

  • High School diploma is preferred; a college culinary degree is advantageous.
  • A minimum of 3 to 5 years of relevant banquet culinary experience is required.
  • Possession of an IL Sanitation License, TIPS, and BASSET licenses is mandatory.
  • CPR Certification and/or First Aid Training is preferred.
  • Experience in a luxury hotel culinary environment is essential.
  • Proficiency in Microsoft Works is required; knowledge of Opera and Delphi is a plus.
