DEPARTMENT: Dining Services

STATUS: Non-Exempt/Hourly

SUMMARY

The Culinary Specialist plays a vital role in the planning, preparation, cooking, and presentation of meals. This position also involves maintaining cleanliness, training dietary aides, serving meals, managing inventory, and communicating needs to the Director of Culinary Services.

QUALIFICATIONS AND EDUCATIONAL BACKGROUND

  • High school diploma or GED is preferred.
  • Strong customer service skills and the ability to manage multiple tasks effectively.
  • Prior experience in food service is advantageous.
  • Must pass a background check, TB skin test or x-ray, and health screening.
  • Current CPR certification is required.
  • Completion of a five (5) hour initial fire safety training course as mandated by local regulations.

KEY RESPONSIBILITIES

  • Prepare and present high-quality, nutritious meals in accordance with established recipes and menus.
  • Assist the Executive Chef in meal preparation and service.
  • Prepare meats and poultry for cooking, including cutting, trimming, and carving.
  • Portion cooked foods and provide guidance to kitchen staff on portion sizes and garnishing techniques.
  • Inspect food and supplies to ensure they meet quality and quantity standards.
  • Ensure proper food storage and handling, adhering to all safety regulations.
  • Maintain cleanliness and sanitation of kitchen equipment and dining areas.
  • Complete dietary cards for residents and ensure their use during meal service.
  • Engage residents in meaningful conversations and activities tailored to their interests.
  • Follow strict food sanitation and infection control procedures.
  • Label all drinking containers appropriately.
  • Adhere to scheduled meal and snack times.
  • Comply with Federal and State long-term care regulations.
  • Follow cleaning schedules and perform assigned cleaning duties.
  • Assist in setting up the dining room and serving residents as needed.
  • Participate in receiving and storing food and supplies.
  • Attend in-service educational programs as required.
  • Adhere to safety protocols while performing all tasks.
  • Understand and follow the facility's fire and disaster plans during drills and emergencies.
  • Perform additional duties or special assignments as directed by the Executive Chef or Culinary Team Leader.

Physical Requirements

Lifting: More than 25 lbs routinely; more than 75 lbs occasionally.

Transfer: 150 lb. or greater resident weight.
