  • Assist in menu development, testing, and refining recipes to meet the highest quality standards.
  • Prepare assigned menu items following department recipes and policies.
  • Ensure proper handling and storage procedures are in place for all food supplies and equipment.
  • Develop menus that offer realistic variety while ensuring efficient and cost-effective production.
  • Participate in planning and executing operations, ensuring consistent and attractive presentation of food items.
  • Oversee kitchen staff and ensure adherence to food service health, safety, nutritional, recipe, policies, and guidelines.
  • Assist the Executive Chef in implementing the departmental vision and goals.
  • Collaborate with the dining management team to ensure strategic planning and annual initiatives are understood and uniformly administered.
  • Attend conferences, training sessions, and workshops to elevate department operations.
  • Supervise and train production staff, ensuring they adhere to culinary standards.
  • Develop cleaning procedures and standards, and ensure all workstations, areas, and equipment are fully cleaned, sanitized, and stocked.
  • Identify and resolve quality assurance issues creatively and imaginatively.
  • Conduct periodic inspections, establish performance goals, and develop training programs for service staff.
  • Implement personnel policies and procedures in accordance with University and Department Services guidelines.
Qualifications
  • Bachelor's degree in a related field.
  • 1 year of related experience or 5 years of equivalent experience/education/training.
  • Serve Safe Certification or equivalent.
  • CCC certification with the American Culinary Federation (preferred).
  • CA Driver's License.
