Job Overview

Shells Seafood Restaurant is seeking a skilled Prep Cook to join our culinary team. As a key member of our kitchen staff, you will be responsible for preparing and cooking food to meet our high standards of quality and presentation.

Responsibilities
  • Prepare the prep area by sanitizing work surfaces and sinks.
  • Check the prep sheet to verify accuracy of current stock.
  • Rotate product to ensure quality standards.
  • Set aside expired product and log on waste sheet. Discard after manager review.
During Shift
  • Use proper utensils and scales to prepare product to recipe specs.
  • Use stove, choppers, knives, and tilt skillet in preparing recipes.
  • Cut and prepare by recipe all foods, sauces, and soup according to daily par.
  • Re-stock dishes/utensils, wipe down surfaces, and clean pans throughout shift to maintain the cleanliness and order of the kitchen, including the dish area.
  • Work as a team with utility to keep the dish area orderly and caught up.
  • Fill out Waste Sheet when a dish is prepared incorrectly, etc. to track food waste.
  • Work independently in kitchen during the shift.
  • Properly sanitize all tools, boards, containers, and prep surfaces after each use.
  • Record cooling HACCP temperatures on HACCP Temp Chart.
  • Inspect product to quality specifications. Put away orders in proper places.
  • Follow proper phone etiquette when answering the phone.
  • Cross training may be required on-line Cook Stations for volume periods.
End of Shift
  • Help Dishwasher with cleaning pots.
  • Dump trash from kitchen into dumpster.
  • Mop floor and clean all work surfaces and equipment.
  • Pull frozen product from freezer to begin thaw process.
  • Follow Daily and Weekly Cleaning Charts.
  • Check out with Manager at end of shift; perform additional duties as assigned.
Qualifications
  • Minimum 17 years of age or older.
  • High School or GED equivalent preferred.
  • Previous kitchen experience preferred but not required.
