Position Overview
GENERAL PURPOSE
The Nutritional Cook/Support Cook is responsible for upholding exceptional standards in food preparation, production, service, and portion control, utilizing standardized recipes to cater to all customers.
REPORTS TO:
Director of Dietary / Dietary Manager / Assistant Dietary Manager
QUALIFICATIONS:
Candidates should possess a genuine passion for food service and enjoy working with elderly and healthcare patients. A willingness to learn food preparation and cooking techniques is essential. Knowledge of therapeutic and modified diet information is preferred for preparing and serving patient trays. The ability to read and interpret standardized recipes for both quantity and quality food production is required. Familiarity with sanitation procedures is necessary, and candidates must be prepared to perform repetitive tasks daily.
Excellent customer service and communication skills are crucial. Candidates must be able to follow both oral and written instructions and must be proficient in reading, writing, speaking, and understanding English. Understanding labels on chemicals and MSDS sheets is necessary for safe and correct usage. Good mental and physical health is required.
Leadership qualities are essential, as the candidate will supervise and coordinate with dietary partners. Cooperation and productivity with all dietary and departmental partners, adhering to established policies, are expected. Punctuality and reliability in fulfilling job responsibilities are essential.
Possession of a Food Handlers Certificate or completion of a Sanitation Course may be required, as per state regulations. The ability to work under supervision is necessary.
PHYSICAL DEMANDS:
Candidates must be able to stand or walk for most of the working day and perform tasks that involve bending, stooping, squatting, and twisting frequently. The ability to lift 50-60 pounds, sweep and mop floors, and push/pull carts is required. Climbing on safety ladders for cleaning, storage, or other duties is necessary. Fine motor skills and manual dexterity are essential for food service equipment operation.
Candidates must possess sufficient mental acuity to perform job requirements effectively. Adequate vision and hearing are necessary to respond to patient requests and communicate with staff. The ability to handle and use food service equipment safely is required, as is the ability to taste and smell foods to assess quality.
Working in extreme temperatures and noisy environments is expected. Candidates must maintain alertness and work safely to avoid injuries while handling kitchen equipment and navigating wet floors. Medical conditions that could pose a risk to self or others in the Dietary Department are not acceptable.
DUTIES AND RESPONSIBILITIES:
Responsibilities may include, but are not limited to:
- Demonstrating self-starter qualities and making independent decisions when necessary.
- Managing the dietary department in the absence of the dietary manager and acting as supervisor when required.
- Understanding and complying with all relevant regulations affecting dietary practices.
- Maintaining a safe, secure, and sanitary dietary department and reporting issues to the Dietary Manager.
- Conserving supplies and preventing food waste while reporting needs to the Dietary Manager.
- Receiving and storing food and supplies properly to ensure quality.
- Reviewing menus and preparing meals accurately and attractively.
- Testing and tasting foods for quality assurance.
- Ensuring timely meal preparation and service.
- Portioning foods correctly and checking trays for accuracy before delivery.
- Recording menu substitutions when necessary.
- Exhibiting initiative in food presentation and service.
- Attending training sessions as required.
- Maintaining a clean and organized work area.
- Communicating effectively with staff, patients, and families.
- Processing new diet orders and keeping tray cards updated.
- Adhering to the department's dress code.
- Performing additional tasks as needed.
