Job Summary

The Executive Culinary Director will be responsible for planning and managing the kitchen staff in the procurement, production, preparation, and presentation of all food for the hotel. This individual will oversee the day-to-day operations of the kitchen, including outlets, banquets, stewarding, and purchasing.

Key Responsibilities
  • Leadership and Management: Direct the kitchen staff to achieve profitable, competitive, and quality products.
  • Human Resources: Manage the recruitment, retention, and motivation of kitchen associates, providing a safe and healthy work environment.
  • Food Procurement and Production: Plan and manage the procurement, production, preparation, and presentation of all food in the hotel, ensuring a safe and sanitary work environment.
  • Cost Control and Budgeting: Develop, implement, and manage the department's budget, analyzing and controlling labor and food costs to meet management objectives.
  • Menu Development and Implementation: Develop and implement menus and back-up systems within corporate guidelines to improve revenues and profit margins while maintaining quality.
  • Accident Prevention and Safety: Execute and promote the Accident Prevention Program to minimize liabilities and related expenses.
  • Attendance and Availability: Comply with attendance rules and be available to work on a regular basis.
Qualifications
  • Education: Two+ years of post-high school education, with culinary education being desirable.
  • Experience: Five+ years of employment in a related position, with advanced knowledge of the principles and practices within the food profession.
  • Leadership Skills: Possess leadership skills to motivate and develop staff, ensuring the accomplishment of goals.
  • Communication Skills: Effective verbal and written communication skills, with the ability to adapt communication style to suit different audiences.
