The Culinary Specialist II should be capable of following instructions and working swiftly, while still requiring guidance due to limited kitchen experience. Consistent compliance with departmental policies and the Biltmore Standard Operating Procedures (BSOPs) is essential.

Key Responsibilities

  • Manage the Cook station and provide support to all other kitchen stations.
  • Prepare all menu items for various meal periods in the designated kitchen.
  • Familiarize oneself with safety protocols and emergency procedures.
  • Effectively expedite a la carte orders or workflow tasks in the absence of the Chef or Sous Chef.
  • Comprehend the significance of standard recipes and utilize them proficiently.
  • Produce all food items required in the assigned kitchen, including:
  • Mother Sauces, various stocks, and the ability to create additional sauces as needed.
  • Fabricate all types of meat, fish, and poultry competently.
  • Understand the various herbs and seasonings and their applications.
  • Exhibit basic Garde Manger skills such as creating fruit displays, canapés, cold food presentations, pates, dressings, and cold sauces.
  • Prepare specialty dishes like Paella, stews, gumbo, etc.
  • Demonstrate knowledge in preparing diverse cuisines including French, Italian, Mediterranean, Asian, and Caribbean.
  • Master basic cooking techniques and, if necessary, train Cook II on methods such as braising, poaching, roasting, steaming, sautéing, grilling, and blanching.

Essential Skills and Qualifications

  • Education: A High School Diploma is mandatory.
  • Experience: A minimum of one to two years as a Cook in a hotel or restaurant with comparable standards, with fine dining experience preferred.

Physical Requirements

  • Operate necessary office equipment with finger dexterity.
