Key Responsibilities
  • Lead and manage all kitchen functions, including food purchasing, preparation, maintaining quality standards, sanitation, and cleanliness.
  • Ensure all kitchen personnel follow proper sanitation practices and that regulations are met.
  • Maintain appropriate cleaning schedules for kitchen equipment, food storage areas, and other facilities.
  • Check the quality of both raw and prepared food to meet The Wildbirch Hotel's culinary standards.
  • Estimate food and supply requirements, managing costs effectively while maintaining portion control and minimizing waste.
  • Train and instruct kitchen staff in the preparation, cooking, and presentation of food, ensuring consistency across all dishes.
  • Collaborate with hotel management to plan and price menu items, reflecting the local Alaska culture, seasonal availability, and guest preferences.
Requirements and Qualifications
  • Prior Experience: 3-5 years as an Executive Chef or Executive Sous Chef in a hotel or high-end restaurant environment, with a focus on delivering exceptional culinary experiences.
  • Education: High school diploma or GED required; Culinary Degree or related degree preferred.
  • IT Expertise: Advanced knowledge of kitchen management software and proficiency with Microsoft Office Suite.
  • Subject Expertise: Strong leadership and organizational skills; ability to remain calm under pressure, multitask, and work in a fast-paced environment.
