Job Summary

Perry' Restaurant LTD is seeking a skilled Meat Craftsman to join our team.

Estimated Salary: $45,000 - $60,000 per year

The ideal candidate will have at least 2 years of experience in a fast-paced full-service restaurant or fine dining setting. They will be responsible for receiving, inspecting, and storing protein products, ensuring they meet the company's quality standards.

Key Responsibilities:

  • Receive, inspect, and store all protein upon delivery, adhering to Perry' Restaurant LTD's quality control procedures.
  • Accurately complete portion sheets and data recording into Compeat.
  • Cut and trim all protein products using butcher's cutlery and power equipment.
  • Consistently follow proper portion controls and presentation as indicated according to company specifications.
  • Perform daily preparation of proteins for the meat display and ensure proper food rotation of all proteins being prepared.
  • Daily cleaning, sanitation, and organization of kitchen, walk-in coolers, and all storage areas.

Requirements:

  • At least 2 years' butchering experience in a fast-paced full-service restaurant or fine dining setting preferred.
  • Understanding of recipes, preparation, cooking, and knife handling skills.
  • Familiarity with safety, sanitation, and food handling procedures.
  • Ability to work as a team and communicate effectively.
  • Strong problem-solving skills and ability to work calmly under pressure.
