Position Summary:
The Culinary Services Manager will oversee the food service operations in alignment with nutritional standards, company policies, and budgetary constraints. Responsibilities include menu planning, food preparation, dining service supervision, event catering, inventory management, regulatory compliance, and staff management. This role also involves ensuring that dining areas are maintained in a clean and sanitary condition while managing the receiving, rotation, and storage of food products.
Qualifications:
- At least one year of experience in a culinary role within a long-term care environment is preferred.
- Certification in food preparation or culinary training is preferred.
- Experience in a supervisory or managerial capacity is preferred.
- Current food service sanitation certification is required.
- A genuine desire to work with older adults.
- Proficiency in reading, writing, and speaking English.
- Must be at least 21 years old and pass a background check.
- A physical examination by a licensed physician and a negative drug screening are required.
- Ability to respond effectively in emergency situations.
Key Responsibilities:
Food Management and Inventory
- Develop weekly menus that adhere to company policies and include a variety of nutritious and seasonal foods.
- Maintain sufficient inventory levels of food and supplies from approved vendors.
- Manage food service budget effectively.
Food Preparation and Service
- Prepare and cook meals according to nutritional guidelines and individual dietary needs, presenting food in an appealing manner.
- Maintain weekly resident menus and ensure distribution to residents.
- Support residents' independence during meals by providing necessary adaptive equipment.
- Ensure timely and pleasant food delivery.
- Engage with residents during meal times to ensure satisfaction with service.
- Organize food service for special events as needed.
- Encourage resident involvement in the food service program and welcome their feedback.
Compliance and Sanitation
- Ensure adherence to local health regulations and company policies.
- Maintain a Food Safety Manager Certificate.
- Keep the kitchen environment clean, organized, and safe.
- Follow proper food storage and handling procedures to meet infection control standards.
- Maintain CPR and First Aid certifications.
Staff Management and Training
- Assist in recruiting and hiring culinary staff.
- Supervise food service personnel and ensure adequate staffing levels.
- Lead by example, fostering teamwork and promoting the organization's philosophy.
- Conduct regular performance evaluations for staff.
- Address on-the-job injuries reported by employees appropriately.
- Oversee training for all culinary staff in compliance with regulations and company policies.
Knowledge Requirements:
- Understanding of state food handling and kitchen regulations.
- Familiarity with OSHA standards.
- Knowledge of fire and safety procedures.
- Proficiency in operating kitchen appliances.
Reports to: Executive Director
Physical Job Requirements:
To perform the essential functions of this role, the employee must be capable of executing key physical tasks for extended periods. Proper body mechanics and safety protocols must be adhered to. In a typical eight-hour workday, the employee will:
- Stand or walk for up to eight hours.
- Sit for up to two hours.
- Frequently lift and support weights up to 30 pounds.
- Occasionally lift and carry items weighing up to 50 pounds.
- Frequently kneel, bend, and reach as necessary.
