Position Overview:

The Culinary Operations Supervisor oversees all aspects of kitchen management, ensuring excellence in food procurement, preparation, and adherence to quality standards, safety, and sanitation protocols. This role includes training staff on essential kitchen practices related to food handling and maintaining cleanliness.

PRIMARY DUTIES:

  • Guarantee that all dishes and ingredients are consistently prepared and presented according to the establishment's recipes and serving standards.
  • Manage food ordering processes to align with established product specifications, ensuring accurate delivery and compliance with receiving procedures.
  • Monitor food costs and usage by implementing proper requisitioning, storage practices, and waste management, including maintaining optimal food holding and refrigeration temperatures.
  • Assist in maintaining high guest service standards and operational efficiency as needed.
  • Collaborate with management to develop and price menu offerings, establishing portion sizes and creating standard recipe documentation for new items.
  • Ensure all kitchen equipment is maintained in a clean and functional state through regular inspections and adherence to preventative maintenance schedules.
  • Facilitate orientation and training for new kitchen staff on company policies and operational procedures.
  • Prepare necessary documentation, including reports and schedules, in an organized and timely manner.
  • Ensure compliance with performance appraisal policies and timely completion of evaluations for kitchen staff.
  • Schedule workforce based on anticipated business needs while ensuring all roles are filled as required and labor costs are managed effectively.
  • Administer company policies regarding personnel matters, ensuring fair and consistent corrective actions are taken when necessary.
  • Oversee the training of kitchen staff in the safe use of kitchen equipment and utensils.
  • Responsible for educating kitchen personnel on cleanliness and sanitation standards.
  • Maintain cleaning schedules for kitchen areas, including floors, walls, equipment, and storage spaces.
  • Provide safety training covering first aid, CPR, lifting techniques, and handling hazardous materials.
  • Participate in scheduled staff meetings and contribute suggestions for operational improvements.

Qualifications:

  • Minimum of 5 years of experience in various kitchen roles, including food preparation and line cooking.
  • Demonstrated leadership capabilities.
  • Strong organizational and decision-making skills.
  • Able to thrive in a fast-paced environment.
  • At least 6 months of experience in a supervisory role.
  • Effective communication skills.
  • Ability to stand for extended periods.
  • Exemplary hygiene and grooming standards.
