We are seeking an accomplished Executive Pastry Chef to lead our pastry program in Miami, Florida. The ideal candidate will possess a creative flair, blending Mediterranean, French, and Asian influences to deliver exceptional pastry experiences.
Key Responsibilities:
- Collaborate with cross-functional teams to develop innovative dessert and pastry menus
- Design and implement seasonal pastry specials to elevate the guest experience
- Conduct thorough costing and evaluation of pastry items in conjunction with the cost control team
- Develop and maintain accurate recipes, ensuring consistency with operational standards
- Train operational staff on new desserts and pastry launches
- Audit food quality and recipe adherence regularly
- Develop standard recipes and techniques to uphold quality and minimize costs
- Evaluate pastry products to maintain high quality standards and cost efficiency
- Liaise with Food and Beverage and Operations management to exceed guest expectations
- Stay updated on the latest pastry and culinary trends and implement accordingly
Requirements:
- Experience in Mediterranean, French, and Asian-inspired pastry
- Background in Michelin-starred restaurants and high-volume pastry kitchens
- Culinary degree (2- or 4-year) required
- Minimum 10 years of experience in pastry kitchen managerial roles, preferably as Head or Executive Pastry Chef in high-volume settings
- Excellent verbal communication and leadership skills
- Strong attention to detail and organizational abilities
- Proficiency in computer applications such as Excel and Windows
- Ability to adapt and thrive in a fast-paced kitchen environment
