Join Our Culinary Team as a Nighttime Cook
The Grille at Middlebury College is looking for a dedicated and enthusiastic team member to fill the role of Nighttime Cook. In this position, you will be responsible for preparing a diverse range of menu items utilizing various kitchen equipment, including griddles, char broilers, fryers, and pizza ovens, while adhering to established guidelines.
Key Responsibilities:
- Prepare an assortment of meats, seafood, poultry, vegetables, and other food items for cooking using broilers, ovens, grills, fryers, and other kitchen tools.
- Lead food production tasks, which include chopping vegetables, meats, and cheeses, as well as operating ovens and toasters.
- Consistently follow standard portion sizes, cooking methods, quality standards, and kitchen policies to ensure food safety and sanitation.
- Occasionally serve alcohol in compliance with local laws and regulations, ensuring certification from the appropriate authorities.
- Assist in receiving and managing deliveries while maintaining proper food storage and handling procedures.
- Uphold the highest standards of cleanliness in back-of-house operations, including completing temperature logs and following cleaning protocols.
- May be required to assist with point-of-sale operations and cover other dining services as needed.
- Maintain cleanliness of work areas, including counters, floors, dishes, and equipment, ensuring they meet sanitary standards.
Requirements:
- High school diploma or GED is preferred.
- Safe Serve Food Service Sanitation Certificate will be provided during the training period.
- Commitment to developing culinary skills and versatility within the unit and organization.
- A minimum of three years of experience as a cook is required.
- Experience or training in cold food preparation, food storage, and sanitation standards is essential.
Physical Demands and Working Conditions:
Must be able to stand for extended periods, engage in frequent bending and overhead reaching, and lift weights ranging from 10-50 lbs. Repetitive hand movements for grasping, pushing, pulling, and fine manipulation are also required.
