Production Baker

A skilled Bread Baker is needed to join our team at Wolfgang Puck Fine Dining Group. As a key member of our bakery team, you will be responsible for preparing a variety of baked goods, including breads, rolls, muffins, and pastries.
Key Responsibilities:- Review production schedules to determine the variety and quantity of goods to bake and to assemble supplies and equipment needed for daily baking activities.
- Receive ingredients and other supplies from the main kitchen and/or pantry as required for daily operations.
- Cut and weigh dough into uniform portions with a knife or divider, mold dough into loaves or other shapes, and place in pans; inspect product for quality during and after baking and make adjustments to processes as required.
- Clean and maintain work areas, utensils, and equipment.
- Attend to day-to-day problems and needs concerning equipment and food supplies; detect and ensure disposition of spoiled or unattractive food, defective supplies/equipment, and/or other unusual conditions.
- Complete production sheets and other records as required.
- Minimum 1 year of fine dining food service experience.
- Previous bread production cook experience preferred.
- Knowledge of supplies, equipment, and/or services ordering and inventory control.
- Ability to monitor and/or maintain quality control standards.
- Ability to prepare and bake a variety of pastries, rolls, and/or other baked goods.
- Ability to gather data, compile information, and prepare reports.
- Ability to receive, stock, and/or deliver goods.
- Knowledge of maintenance and care of culinary facilities, equipment, supplies, and materials.
- Knowledge of food preparation and presentation methods, techniques, and quality standards.
May require evening and weekend hours. While performing the duties of this job, the employee generally works in an indoor kitchen environment with exposure to heat from ovens, hot foods and steamers, and cleaning chemicals, fumes, equipment, and metal objects.
The noise level in the work environment is usually moderate but may be loud dependent on specific work site and/or equipment operation.
