We are seeking a skilled and enthusiastic Sushi Chef who possesses a passion for crafting exquisite sushi dishes. Your expertise in preparing and presenting sushi will play a vital role in delivering a memorable dining experience.

Key Responsibilities

Essential functions of the role include, but are not limited to:

  • Efficiently prepare high-quality sushi for guests, adhering to established portion sizes, cooking techniques, and quality standards.
  • Provide mentorship and training to fellow team members on sushi preparation and presentation techniques.
  • Prepare and present all food items, both hot and cold, in accordance with outlet standards.
  • Take full responsibility for the quality of all food products served.
  • Assist in the preparation of banquet event orders as required.
  • Comply with all health regulations regarding cleanliness and sanitation.
  • Maintain adequate stock levels of food products at line stations to ensure smooth service.
  • Portion food items prior to cooking, following standard recipes and specifications.
  • Keep workstations clean and organized, including all kitchen equipment and surfaces.
  • Prepare items for various cooking methods, including broiling, grilling, and frying.
  • Ensure proper plate presentation and garnishing for all dishes.
  • Handle, store, and rotate all products in accordance with safety standards.
  • Assist with food preparation tasks during slower periods as needed.
  • Follow proper closing procedures and assist colleagues in kitchen shutdown.
  • Participate in scheduled employee meetings and contribute suggestions for improvement.
  • Perform additional duties as assigned by the Kitchen Manager or supervisor.

Qualifications:

Required skills and experience include:

  • A minimum of 2 years of experience in kitchen preparation and line cooking.
  • Basic knowledge of professional cooking techniques and knife skills.
  • Understanding of food cost management.
  • Knowledge of kitchen safety, sanitation, and food handling practices.
  • Availability to work evenings, weekends, and holidays.
  • Ability to read and comprehend basic cooking instructions.
  • Effective communication skills with managers and kitchen staff.
  • Commitment to embodying the guiding principles of IR Management LLC.

Physical Requirements:

  • Frequent standing and walking.
  • Occasional exposure to varying temperatures and conditions.
  • Ability to stoop, kneel, or crawl as necessary.
  • Occasional lifting or carrying of items up to 50 lbs.
  • Ability to navigate stairs and ramps.
  • Frequent wrist and spine movement during food preparation.
  • Constant communication and interaction with team members.
