The Senior Culinary Specialist is responsible for executing advanced culinary tasks and providing leadership during the preparation, seasoning, cooking, assembly, and serving of meals for residents at the State Supported Living Center (SSLC).

This role includes overseeing the preparation, cooking, portioning, distribution, and serving of food for both standard and modified diets. Ensures compliance with federal and state food handling guidelines. Evaluates menus to determine the types and quantities of food to be prepared, considering specialized dietary needs and textures.

Acts as a shift leader, guiding others in the timely preparation and delivery of meals in accordance with Intermediate Care Facility (ICF) standards.

Ensures adherence to prescribed menus, recipes, and standards while completing necessary documentation. Inspects food service areas and equipment for proper sanitation and safety. Monitors inventory and records food consumption, reporting any kitchen equipment needing repair or supplies required through the appropriate channels.

Provides leadership, training, and direction to team members in all aspects of food preparation, sanitation, safety, and hygiene standards.

Recommends improvements for operational efficiency.

Additional responsibilities may include working in the ingredient room, assisting in the facility canteen, or driving the delivery vehicle as needed.

Works under limited supervision, exercising considerable initiative and independent judgment. Generally adheres to a designated shift but may be required to work a variable schedule based on facility needs. May work unusual or extended hours in response to emergencies or operational requirements.

Performs other duties as assigned.

Additional duties may include actively participating in or supporting the agency's obligations for disaster response and/or recovery or Continuity of Operations (COOP) activation.

Such participation may necessitate an alternate shift pattern or location.

Essential Job Functions:

Regular attendance is required, and you may be asked to work a specific shift schedule or, at times, a rotating schedule, extended shifts, and/or overtime in accordance with agency leave policies while performing other assigned duties.

Evaluates menus to determine types and quantities of food to be prepared, considering specialized diets and modified textures.

Plans, tests, and adjusts standardized recipes. Calculates food requirements based on recipes. Reviews menus to determine the types and quantities of food to be prepared for each meal. Oversees and assesses the ongoing testing of standardized recipes and implements necessary adjustments. Monitors food consumption records to inform recipe and menu modifications.

Serves as a lead worker, providing direction to others.

During the assigned shift, oversees compliance with Central Kitchen Operation Manual Procedures and ensures adherence to proper food handling protocols.

Inspects dining, service, and food preparation areas for compliance with sanitation, safety, and health regulations. Ensures that kitchen areas, equipment, and utensils are cleaned and that leftovers are stored correctly.

Guides, trains, and supervises others in the preparation, seasoning, cooking, and assembly of food for standard and modified diets, using appropriate equipment and utensils while maintaining sanitary conditions.

Inspects food handling and preparation techniques. Checks and tastes food during preparation to ensure compliance with standards. Maintains adequate controls over food preparation quantities and portion sizes.

Operates and maintains all food service equipment safely.

Provides guidance, training, and oversight to others in the safe operation and maintenance of food service equipment to minimize the risk of injury and equipment damage.

Ensures accurate calculations of food amounts to prepare and deliver to food service areas by utilizing standardized menus and recipes, ensuring an adequate food supply, reducing callbacks from food service areas, and providing accurate meals to residents.

Oversees and participates in the safe and sanitary distribution of food in accordance with food service policies, including driving a delivery vehicle when necessary.

Instructs staff in setting up serving lines and serving food as appropriate. When needed, serves food, including for special diets, following food service procedures. Ensures that food is maintained at proper serving temperatures.

Completes required records and reports, such as equipment work orders and documentation notes on subordinate cooks. Reports kitchen equipment needing repair or replacement, or supplies required using the designated protocol. Recommends changes to cooking and kitchen operations to enhance efficiency to the designated supervisor.

Monitors inventory of supplies and reviews requisitions for necessary items. Coordinates the inspection of food items upon arrival for quantity, quality, and temperature conditions. Ensures that perishables and frozen foods are stored under appropriate temperatures and conditions.

Establishes and administers orientation and in-service training programs.

Coordinates staff training on safety regulations, sanitary procedures, food preparation, portion control, and the operation of food service equipment.


Performs other duties as assigned.
