Job Summary

Key Responsibilities
  • Organize and maintain a clean and efficient dishroom, adhering to all health and safety regulations.
  • Operate dishwashing equipment, including dishwashers and sanitizers, to ensure all dishes and utensils are thoroughly cleaned and sanitized.
  • Scrape and rinse all dishes and utensils to prevent food residue and bacterial growth.
  • Pre-soak all eating utensils prior to washing to ensure thorough cleaning.
  • Check and record the pH and temperature of the final rinse water daily to ensure compliance with health and safety regulations.
  • Inspect all clean dishes and utensils for stains or food particles, and re-wash as necessary.
  • Clean and sanitize all equipment, including dish dollies and stack all dish racks with dollies.
  • Wash down walls and wipe and polish all stainless steel surfaces in accordance with our cleaning schedule.
  • Clean and sanitize all work surfaces and sinks before each use.
  • Properly fill the 3-compartment sink and wash, rinse, and sanitize all pots and pans, following the six steps to pot washing outlined in our operations manual.
  • Sweep and mop the kitchen, delivery area, storage areas, and servery to maintain a clean and safe environment.
  • Remove all trash to the dumpster and separate cardboard and other recyclables into the appropriate bin.
  • Clean garbage pails weekly and replace garbage bags frequently throughout the day.
  • Assist wait staff or line servers with loading dishes onto carts and move carts to the dish machine area and unload them.
  • Wash off carts after each use and receive all deliveries and put away stock.
Requirements
  • High school diploma required.
  • Ability to stand for long periods, walk, and move around the kitchen and dining areas.
  • Ability to lift and move up to 40 pounds, with occasional lifting of heavier items.
  • Ability to work in a fast-paced environment and maintain a high level of attention to detail.
  • Ability to work effectively in a team environment and communicate with colleagues and management.
Work Environment

The work is performed primarily in the kitchen and on the serving line. Standing most of the work day is required, and work requires movement in and out of store rooms and freezers. Exposure to extreme temperatures (hot and cold) due to cooking and refrigeration equipment is also a requirement. The noise level in the work environment is moderate to loud.
