Job Title: Sous Chef

We are seeking a highly skilled and experienced Sous Chef to join our team at Palmer Station in Antarctica.

Job Summary:

The Sous Chef will be responsible for supervising and training production cooks to produce high-quality meals, maintaining clean and sanitary work areas, and assisting the Food Service Supervisor as needed.

Key Responsibilities:
  • Supervise and train production cooks to produce high-quality meals
  • Maintain clean and sanitary work areas, equipment, and tools
  • Assist the Food Service Supervisor with daily operations
  • Coordinate with other departments to ensure smooth food service operations
  • Develop and implement menus, recipes, and food preparation procedures
  • Monitor and control food costs, inventory, and waste
  • Ensure compliance with food safety and sanitation regulations
  • Train and orient new staff members on food service procedures and policies
Requirements:
  • High school education or equivalent
  • Culinary arts degree or equivalent experience
  • Minimum of 2 years of experience as a Sous Chef or equivalent experience
  • Valid ServSafe Food Handler certificate
  • Valid driver's license
  • Valid U.S. Passport
Working Conditions:

The Sous Chef will work in a fast-paced kitchen environment with a team of production cooks, food service staff, and other support staff. The position requires standing for long periods, lifting up to 50 pounds, and working in a cold environment.
