Salary: $60,000 - $80,000 per year

Job Summary: As a skilled Sushi Master, you will be responsible for assisting the Executive Chef in maintaining the highest standards of food production, presentation, and consistency in our sushi bar kitchen. You will coordinate daily fish and prep needs with the reservations team, supervise staff, and maintain sanitation levels. Your attention to detail and ability to work under pressure will ensure seamless service delivery.

Key Responsibilities:

• Food Production: Coordinate food production, maintain high standards in food presentation, and control procedures like labor and food costs.
• Inventory Management: Order and maintain inventory, coordinate daily fish and prep needs with the reservations team, and supervise staff.
• Sanitation and Safety: Maintain sanitation levels, effective working relationships with other departments, and assist in hiring and disciplining staff.
• Chef Support: Supervise food preparation and presentation, maintain adequate supply of foodstuffs, and assure purchases meet food & beverage director's specifications.
• Waste Reduction: Minimize waste, select tasteful recipes with cost-effective ingredients, and ensure kitchen preparedness for service.
• Team Collaboration: Coordinate with room supervisors, practice safety standards, and report unsafe conditions.

Supportive Functions:

• General Duties: Perform general cleaning tasks, folding napkins, replenish condiments, and restock side stands.
• Beverage Program: Assist in beverage program, serve and prepare alcoholic cocktails, and attend required meetings.

Qualification Standards: A grade school education is preferred. Minimum 3 years of sushi experience and 1 year of omakase or direct sushi counter customer interaction experience are required. Basic knowledge of food, beverage, and specialty coffee and tea execution and delivery of beverages and food, and strong table maintenance and communication skills are essential.

Licenses and Certificates: Obtain government required licenses or certificates, such as a Washington Health Card Permit, Oregon Liquor Service Permit, and CPR certification and/or 1st Aid Training.

Appearance and Uniforms: Maintain a neat, clean, and well-groomed appearance, adhering to uniform guidelines and required articles of clothing.
