Food Preparation Responsibilities:

  • Accurately cuts meat in accordance with product specifications and established timeframes.
  • Utilizes the buffet production system effectively to maintain quality and compliance with shelf life standards.
  • Regularly rotates cut and packaged meat to ensure optimal freshness.
  • Organizes and stocks the Meat Cooler following approved food safety protocols.
Sanitation Standards:
  • To prevent cross-contamination, thoroughly sanitizes all surfaces between the preparation of different types of meat.
  • Identifies spoiled meat by its texture and odor.
  • Maintains cleanliness in the meat preparation area according to service and quality standards.
  • Adheres to local health department regulations.
Operational Excellence:
  • Employs administrative forms to keep an accurate inventory of all meat products and assess production levels.
  • Alerts management to any inconsistencies in product quality or equipment functionality.
  • Completes opening and closing administrative tasks as required.
  • Ensures proper maintenance of equipment as outlined in the Equipment Maintenance manual.
  • Performs assigned duties as per the roster.
