We are seeking a highly skilled and experienced Head Baker to lead our pastry production team at our DC Commissary. As a key member of our leadership team, you will be responsible for overseeing all aspects of bagel and pastry production, ensuring high-quality products, and maintaining a clean and organized kitchen.
Key Responsibilities- Oversee and participate in all aspects of bagel and pastry production, including preparation, baking, and finishing.
- Manage the daily operations of the bakery team, including training and supervising bakers to maximize productivity and maintain high standards.
- Develop and refine recipes to maintain product quality and consistency, while exploring opportunities for new products and seasonal offerings.
- Ensure proper mixing, proofing, baking, and finishing techniques are used to achieve optimal product results.
- Monitor inventory levels and coordinate with the purchasing team to ensure all necessary ingredients and supplies are stocked and available.
- Implement and maintain food safety and sanitation procedures, ensuring compliance with health and safety regulations.
- Collaborate with the Commissary and Shops Operations teams to ensure timely and accurate fulfillment of production orders for all CYM locations.
- Conduct regular quality checks on baked goods to ensure they meet CYM's standards for taste, texture, and appearance.
- Manage equipment maintenance and troubleshoot any issues to minimize downtime and maintain efficient production.
- Foster a positive and collaborative work environment, providing guidance, support, and feedback to team members to promote their professional growth.
- Minimum of 5 years of experience in a commercial baking environment, with at least 2 years in a leadership role.
- Proven expertise in bagel and pastry production, with a strong understanding of baking techniques and processes.
- Excellent organizational and time-management skills, with the ability to oversee multiple production lines and meet deadlines.
- Strong leadership skills, with experience in managing and developing a team of bakers.
- Knowledge of food safety and sanitation regulations, with a commitment to maintaining a clean and safe work environment.
- Ability to work early mornings, weekends, and holidays as needed to ensure production schedules are met.
- Passion for baking and a dedication to producing high-quality products.
- Strong communication and interpersonal skills, with the ability to collaborate effectively with cross-functional teams.
