Key Responsibilities:
  • Meat Preparation:
    Accurately cuts and prepares meat according to established specifications and timeframes.
  • Adheres to the buffet production system to maintain quality standards and ensure optimal shelf life.
  • Regularly rotates and organizes cut and packaged meat to guarantee freshness.
  • Maintains the Meat Cooler in compliance with approved food safety protocols.
Sanitation Standards:
  • To prevent cross-contamination, thoroughly sanitizes all surfaces between different types of meat production.
  • Identifies and discards any meat that appears spoiled or has an off odor.
  • Ensures the meat preparation area is cleaned and sanitized in accordance with health and quality standards.
  • Complies with local health department regulations.
Operational Responsibilities:
  • Utilizes administrative forms to track inventory levels of all meat products and assess production needs.
  • Reports any discrepancies in product quality or equipment to management.
  • Completes opening and closing procedures as outlined.
  • Maintains equipment according to the provided maintenance guidelines.
  • Completes assigned tasks as per the duty roster.
