Key Responsibilities of the Assistant Kitchen Manager

The primary goal of the Assistant Kitchen Manager is to support the Executive Chef in managing the kitchen operations efficiently, ensuring high levels of guest satisfaction through effective planning, organization, and oversight of culinary activities.

Core Duties

  • Oversee the accurate costing and regular review of all recipes and product yields.
  • Ensure food items are prepared according to standardized recipes while maintaining portion control and minimizing waste.
  • Monitor food stock levels to ensure they meet the demands of hotel occupancy and event forecasts.
  • Verify that all food products received meet quality standards and are stored and rotated appropriately.
  • Maintain high standards for associate meals and dining services.
  • Ensure staff are always in clean, tidy uniforms and presentable to guests.
  • Supervise all kitchen stewards and their activities within the culinary department.
  • Motivate the culinary team and provide constructive feedback on performance.
  • Delegate tasks to team members as necessary.
  • Identify individual strengths and weaknesses, providing timely feedback.
  • Ensure compliance with all company and hotel policies and procedures within the culinary department.
  • Guarantee safe and correct usage of all food preparation equipment, ensuring cleanliness and maintenance.
  • Initiate maintenance reports and follow up on necessary actions.
  • A Culinary Degree and/or a minimum of 2 years of progressive kitchen experience is preferred.

Physical Requirements & Work Environment

In this role, employees are frequently required to stand, walk, use hands for various tasks, reach with arms, and communicate effectively. The position may involve climbing, balancing, stooping, kneeling, or lifting and moving items up to 100 pounds. Employees may be exposed to varying weather conditions and temperature extremes, as well as potential hazards associated with kitchen equipment. The ability to navigate stairs while carrying weight is also essential. The noise level in the kitchen environment can range from moderate to loud.
