Job Summary:

The Pastry Sous-Chef is a key member of the Bakery team at Cedar Fair, responsible for assisting the Executive Pastry Chef in the daily activities of the Bakery. This includes menu development, inventory management, and cost control. The successful candidate will be responsible for the production and presentation of pastries and other baked goods, including decorated cakes.

Key Responsibilities:

  • Oversee bakery and icing room production under the direction of the Executive Pastry Chef, creating production lists and delegating tasks to other team members.
  • Maintain a solid knowledge and understanding of all baked goods, applying culinary and baking techniques consistently to ensure product quality, freshness, and presentation meet company standards.
  • Ensure compliance with state and federal regulations regarding food storage, handling, and preparation, as well as maintaining a safe and hazard-free bakery operation.
  • Monitor recipes and coordinate with other departments to maintain essential ingredients and supplies necessary for efficient production.
  • Mentor and counsel team members, enforcing policies and procedures to ensure compliance with departmental standards.
  • Supervise hourly staff, providing work direction, performance reviews, and coaching as needed.
  • Check the quality of materials and condition of equipment, reporting repairs and/or equipment failure to other departments.
  • Establish and maintain productive relationships with other members of management and leadership within the Parks departments.

Requirements:

  • Vocational or technical training in Culinary Arts or equivalent work experience.
  • 2-4 years of work experience in a related field.
  • 1-3 years of supervisory or leadership experience.
