**Job Summary:**

Casino Gaming Institute Inc is seeking a seasoned and talented Executive Culinary Director to oversee multiple dining venues. As a key member of our culinary team, you will be responsible for maintaining our classic dishes, creating new recipes, and improving consistency across all locations and menus.

**Responsibilities:**

  • Develop and maintain recipes, portion specifications, and standard preparation procedures for all dishes, and ensure that all cooks are following these standards at all times.
  • Develop strategies and processes to improve food quality, variety, and service to increase sales.
  • Mentor, train, and conduct in-the-moment coaching with staff as needed, to correct problems as they arise.
  • Demonstrate excellent leadership qualities by reacting well under pressure, and treating others with respect and consideration.
  • Foster and maintain open communication between kitchen staff, supervisors, and management.
  • Make periodic and regular inspections of all kitchens to observe quality of food preparation and service, food appearance, and timeliness in food preparation.
  • Consistently uphold the highest standards of cleanliness and sanitation, by constantly monitoring all areas associated with food preparation, to ensure they are kept clean, safe, and compliant.
  • Determine purchasing specifications and budgetary allotments for all menu items.
  • Oversee inventory ordering and receiving, and product rotation.
  • Develop and maintain staffing schedules to ensure maximum productivity and efficiency, while controlling labor costs.
  • Monitor and adjust staffing levels to meet business needs, while staying in compliance with union contract.
  • Assist Human Resources in hiring, counseling, and termination of kitchen staff.
  • Coordinate training activities for kitchen staff to meet service level standards and maintain compliance with all state and federal food safety guidelines.

**Requirements:**

  • Ability to navigate and utilize Microsoft Office Suite programs (especially Word, Excel, PowerPoint, and Outlook), appropriate point of sale (POS) systems, and any other required operating machines.
  • Skilled in direct interaction with guests.
  • Able to build effective relationships based on respect, trust, and integrity with clients.
  • Reliable, flexible, and a team player.
  • Commitment to perfection and genuine passion for hospitality.
  • This is a full-time position. Candidates must be willing to have flexible schedules and must be willing and able to work holidays, late nights, and weekends.
  • Candidate must be able to lift 40 pounds and work on their feet for extended periods of time.
  • Polite and professional, polished and well-groomed appearance.
  • Must be familiar with health requirements, OSHA regulations, and Department of Labor regulations as they pertain to all kitchen and restaurant employees.
