Job Overview
POSITION SUMMARY
The Lead Pastry Specialist plays a crucial role in collaborating with the Executive Chef and Sous Chefs to manage the daily operations of baking and pastry for the CIA Restaurant Group. This position involves overseeing the creation and presentation of specialty pastry items while contributing to the innovative vision of the culinary team. Responsibilities include managing labor and food costs, ensuring the highest standards of food quality, and enhancing customer satisfaction.
KEY RESPONSIBILITIES
- Develop and execute menu items in partnership with the Sous Chef and Executive Chef.
- Maintain daily communication with the Executive Chef, Sous Chefs, and kitchen staff to ensure availability and functionality of all food and equipment.
- Establish and implement operational systems and Standard Operating Procedures (SOPs) to optimize service and production efficiency.
- Ensure precise and timely production of recipes, adhering strictly to specifications to minimize waste throughout all stages of preparation and service.
- Stay informed on industry trends, new ingredients, and innovative techniques.
- Take ownership of the quality of all products served.
- Organize storage areas, ensuring proper handling, labeling, and sanitation of all food items.
- Maintain accurate inventory levels and coordinate with purchasing to meet culinary requirements.
- Assist with product needs for events, conferences, and culinary classes.
- Submit maintenance requests for equipment repairs or cleaning needs to ensure operational readiness.
- Deliver exceptional customer service to clients and patrons.
- Support team members as directed by the Executive Chef and Sous Chef.
- Perform any additional duties as assigned.
QUALIFICATIONS
Education:
Completion of an AOS in Baking & Pastry Arts or graduation from an accredited culinary institution, or a combination of education and experience.
Experience:
A minimum of two (2) years of pastry experience in a culinary setting.
Licenses / Certifications:
California Food Handlers Certificate or the ability to obtain it within 30 days of hire. HACCP or ServSafe Certification is advantageous.
PREFERRED QUALIFICATIONS
Five or more years of pastry experience in a culinary environment, particularly in high-volume or fine dining establishments.
REQUIRED SKILLS
Ability to thrive in a fast-paced environment while managing multiple tasks effectively. Strong written and verbal communication skills are essential, along with the capability to create and articulate menus and recipes. Must demonstrate leadership and interpersonal skills to foster teamwork and achieve organizational goals. Experience in high-volume cooking is also required.
WORKING CONDITIONS
Flexibility to work various shifts, including evenings and weekends. Physical stamina to stand, bend, and lift up to fifty (50) pounds for extended periods is necessary. Must be able to work in high-temperature environments near cooking equipment.
