The Japanese Cuisine Specialist should possess expertise in modern cooking methods such as foams, sous vide, curing, and hydrocolloids. By utilizing only the highest quality ingredients sourced both locally and globally, you will focus on delivering exceptional flavors in every dish.

The ideal candidate will be responsible for preparing sushi dishes in compliance with health and safety regulations as well as restaurant standards. Key responsibilities include preparing traditional Japanese sushi rice, skillfully chopping, slicing, and filleting various types of fish, and managing supply orders as necessary. You should also be adept at customizing orders based on customer preferences and dietary restrictions.

To excel as a Japanese Cuisine Specialist, it is essential to ensure that all ingredients used are of superior quality. Ultimately, an outstanding specialist should perform well under pressure and uphold restaurant standards during peak times.

Key Responsibilities:

  • Expertly filleting and preparing different varieties of fish.
  • Assessing the quality of fruits, vegetables, and fish used in sushi preparation and notifying the Executive Chef of any subpar quality.
  • Creating a variety of sushi dishes according to established standards for quality, portion size, presentation, and food safety.
  • Maintaining a hygienic workspace to prevent food contamination.
  • Regularly conducting inventory checks of food supplies and other necessary products.
  • Reporting any issues with kitchen equipment to the supervising manager.
  • Sanitizing all utensils and equipment used in sushi preparation prior to each use.
  • Coordinating with service staff to ensure that special requests and dietary needs are accommodated.

Qualifications:

  • High school diploma or equivalent.
  • An associate's degree in culinary arts or certification from the American Culinary Federation (ACF) is preferred.
  • Demonstrated experience in high-end sushi establishments.
  • Valid food handler's certification.
  • Comprehensive knowledge of food safety regulations.
  • Ability to perform well under pressure.
  • Capacity to stand for extended periods.
  • Excellent time management abilities.
  • Exceptional customer service skills.
