The role of a Culinary Specialist at Chicago Marriott Naperville is to deliver exceptional dining experiences to all patrons. This position is responsible for the overall effectiveness of daily kitchen operations. Demonstrates culinary skills by actively engaging in all food preparation tasks. Aims to enhance guest satisfaction while adhering to budgetary constraints. It is essential to maintain hygiene and food safety standards.
KEY RESPONSIBILITIES
The following duties and responsibilities are essential (additional tasks may be assigned):
- Assists in the proper storage of all deliveries and daily requisitions; ensures adherence to food safety and handling protocols, including product rotation, First In-First Out (FIFO) practices, labeling, cleaning, and organizing storage areas.
- Prepares all potentially hazardous foods at the appropriate temperatures in accordance with HACCP guidelines. Reports any food quality concerns, such as spoilage, to the Executive Chef immediately.
- Follows strict personal hygiene standards to guarantee that food served is safe for consumption, including hand sanitization before food handling and wearing appropriate headgear and footwear.
- Expedites all menu items with accuracy and efficiency.
- Standardizes recipes to ensure consistency.
- Sets up and breaks down the cooking line as required.
- Provides assistance in various areas as time permits.
- Immediately informs the Executive Chef of any safety concerns, including equipment malfunctions.
- Exhibits a positive attitude and demonstrates full cooperation with team members.
QUALIFICATIONS
To excel in this position, an individual must be capable of performing each essential duty effectively. The qualifications listed below represent the knowledge, skills, and abilities required. Reasonable accommodations may be made for individuals with disabilities to perform essential functions.
Experience in basic line cooking, including the preparation of soups, stocks, and sauces is required. Strong organizational skills and personal tools are necessary. Must be adept in line setup and possess effective communication skills with all staff members. Willingness to learn new cooking techniques is essential.
EDUCATION AND EXPERIENCE
A high school diploma or GED is required. A minimum of 2 years of experience as a line cook, or an equivalent combination of education and experience, is preferred.
LANGUAGE SKILLS
Must be able to communicate clearly with guests, supervisors, and fellow employees.
CERTIFICATIONS
Food handling and sanitation certification is preferred but not mandatory.

While performing the duties of this job, the employee is regularly required to stand, walk, use hands to handle or feel, reach with hands and arms, talk or hear, and taste or smell. Specific vision abilities required by this job include close vision, color vision, and the ability to adjust focus.
WORKING HOURS
Due to the demands of the hospitality industry, employees may be required to work rotating shifts, including weekends and nights.
