Harris BBQ Chef Job Description

The Harris BBQ Chef is a key member of our culinary team, responsible for overseeing the daily operations of our kitchen. This role requires a strong leader who can manage a team of culinary staff, ensure high-quality food production, and maintain a safe and efficient food service operation.

Key Responsibilities:
  • Supervise and manage a team of culinary staff, including interviewing, hiring, training, and evaluating employee performance.
  • Plan, schedule, and direct work to ensure efficient food production and meet customer demands.
  • Monitor and control food and labor costs, ensuring they are within budget guidelines.
  • Develop and implement menu planning, development, and purchasing concepts to ensure high-quality food products.
  • Ensure compliance with state and local guidelines, as well as company policies and procedures.
  • Conduct safety training for new employees and monitor safety procedures to ensure a safe working environment.
  • Collaborate with the Harris BBQ General Manager and Harris Ranch Resort Executive Chef to achieve business objectives.
Requirements:
  • Culinary Arts degree or equivalent from a 2-year college or technical school, and/or 3-5 years of related experience.
  • Minimum of 3-5 years of high-volume restaurant experience, preferably as a Sous Chef in a 4-star or 4-diamond full-service property.
  • Knowledge and experience with forecasting, budgeting, labor management, and purchasing concepts.
  • Thorough knowledge of food products, standard recipes, and proper preparation.
  • Proven success in a high-quality/high-volume restaurant operation.
  • Ability to analyze and forecast data, ensure proper payroll and production controls.
  • Ability to obtain any governmental required licenses or certificates, such as Serve Safe certification.
  • Bi-lingual in English/Spanish preferred, but not required.
  • Superior communication skills, both written and verbal, with proficiency in MS Word, Outlook, Excel, and PowerPoint.
Physical Requirements:
  • The Harris BBQ Chef is required to use their hands, fingers, arms, stand, walk, and be on their feet for long periods.
  • Specific vision abilities include close vision, distance vision, and peripheral vision.
  • Occasionally lifts, carries, and otherwise moves and positions objects weighing up to 50 pounds.

  • Salary Range: $70,000-$80,000.
