Your Responsibilities:
- Supervise product excellence and food safety in a high-volume kitchen environment.
- Guarantee the implementation of new recipes, providing training and guidance to kitchen personnel, and collaborating with the R&D team to refine existing recipes.
- Manage weekly yield requirements across all sectors to meet precise COG targets.
- Be accountable for mentoring, coaching, and nurturing sous chef staff, including conducting weekly one-on-one sessions for their growth and development.
- Design and execute process controls.
- Ensure consistent, premium taste, appearance, and performance of every meal produced in our bustling kitchen.
- Train and guide team members through various production stages, including pre-operation, cooking, assembly, and cooling.
- Uphold and adhere to the highest standards of food quality and safety.
- Step in to cover stations in the absence of sous chefs.
- Act as a culinary academy leader, imparting techniques and best practices to sous chefs and hourly staff.
- Facilitate a comprehensive hands-on development program for sous chefs, covering topics such as food safety, culinary math, scientific cooking principles, quality recognition, customer needs, and professional ethics.
- Utilize in-depth knowledge of HACCP, FSMA, SQF, and USDA regulations.
- Continuously enhance product quality and process efficiency with support from the Corporate Executive Chef and R&D chefs.
- Address and resolve product quality issues and customer complaints stemming from meal production.
- Ensure cost standards are consistently met.
