Position Overview
The Culinary Specialist is responsible for preparing a variety of food items including meats, seafood, vegetables, and soups, while also ensuring the proper portioning of ingredients prior to cooking. This role includes additional responsibilities in food presentation and garnishing, adhering to health department regulations regarding food safety and handling. Timely food preparation is essential.
Key Responsibilities
Primary Duties
- Uphold and embody the mission of Smithfield Station by delivering exceptional dining experiences through excellent service and high-quality food.
- Monitor and document food temperatures in storage areas and during cooking processes.
- Maintain cleanliness and organization of food preparation areas, ensuring compliance with safe food handling practices.
- Regulate cooking temperatures for various kitchen equipment to ensure food is prepared safely.
- Check the freshness of ingredients, managing inventory by rotating stock effectively.
- Label prepared food accurately and adhere to disposal guidelines for food safety.
- Follow established portion sizes and cooking methods to maintain quality standards.
- Report any discrepancies in food specifications to the management team.
- Ensure the highest quality of food served, prioritizing quality over speed.
- Keep food stations stocked to facilitate efficient service during peak times.
- Handle and store food products according to restaurant policies.
- Ensure even cooking by turning or stirring food as necessary.
- Maintain hot food temperatures above 140°F.
- Season and prepare dishes according to established recipes.
- Utilize various cooking methods such as baking, roasting, and steaming.
- Measure and mix ingredients accurately using kitchen tools.
- Present and garnish dishes according to standard specifications.
- Prepare fruits and vegetables for cooking and serving.
- Carve and prepare meats for service.
- Assist with food preparation during slower periods as needed.
- Support fellow cooks during busy times or emergencies.
- Complete closing tasks in the kitchen following established protocols.
- Communicate with the Manager at the end of each shift.
- Participate in scheduled meetings and contribute ideas for improvement.
- Collaborate with team members to meet guest needs and enhance restaurant operations.
- Fill in for colleagues as necessary to maintain service standards.
Supplemental Duties
- Work with management to develop menus and specials, considering cost and event requirements.
- Estimate food needs and procure items from storage.
- Coordinate with management on special menu items.
- Prepare food based on event requirements.
Tools & Equipment
- Commercial kitchen equipment including:
- Blenders, grinders, and slicers
- Broilers, convection ovens, deep fryers, and grills
- Various knives and cutting tools
- Food safety labeling systems
Qualifications
- Minimum of two years experience in kitchen preparation and cooking.
- At least six months in a similar role.
- Effective communication skills with team members and management.
- Ability to lift up to 40 pounds and stand for extended periods.
- Reliable transportation.
- Availability to work evenings, weekends, and holidays.
