The Job:

The County Hotel Kitchen is seeking an experienced Head Chef to lead its culinary team. The ideal candidate will possess strong leadership skills, the ability to manage a busy kitchen environment, and a passion for creating innovative and delicious menus that cater to the diverse tastes of the company's clientele.

Main Responsibilities:

  • Oversee the food preparation process, ensuring high-quality dishes are produced within budget constraints.
  • Develop and implement menus that showcase creativity and simplicity, while meeting the company's culinary standards.
  • Work closely with hotel management to maintain equipment and ensure seamless service delivery.
  • Conduct regular stock checks and submit reports to the accounts office for cost analysis.
  • Maintain accurate legislative records, including the SFBB log and labeling systems, to ensure compliance with health and safety regulations.
  • Ensure a 4-star rating in external health inspections and maintain internal standards.
  • Adhere to company uniform and dress code policies.
  • Participate in training and refresher sessions as required by hotel management.
  • Contribute to maintaining a safe working environment by adhering to company Health & Safety policies.

Person Specification:

The ideal candidate will possess:

  • At least 2 years of experience running a kitchen with a 5-man brigade.
  • A current Hygiene Certificate of Level 3.
  • Excellent communication and leadership skills.
  • A good working knowledge of culinary trends and optimized kitchen processes.
  • Familiarity with Microsoft Office.
  • Enthusiasm, confidence, and competence.
  • Ability to multitask and maintain performance under pressure.
  • A working knowledge of Health and Safety issues related to kitchen environments.
  • Experience in catering for a coaching hotel operation.
