Job Summary:

The Meat Cutter is responsible for cutting meat to high standards of quality and quantity, ensuring a positive dining experience for our guests. This role requires attention to detail, strong communication skills, and the ability to work in a fast-paced environment.

Key Responsibilities:

  • Cut meat according to product specifications and time standards.
  • Implement and follow the buffet production system to ensure quality and shelf life compliance.
  • Rotate cut and boxed meat to ensure freshness.
  • Stock and arrange the Meat Cooler in accordance with approved food safety guidelines.

Quality and Safety:

  • Sanitize all surfaces between production of chicken and any other meat to eliminate cross-contamination.
  • Recognize and remove spoiled meat.
  • Clean and sanitize the meat room according to cleanliness, service, and quality standards.
  • Comply with local health department laws and regulations.

Operational Excellence:

  • Use administration forms to maintain an inventory of all meat products and determine production levels.
  • Notify the Manager of any discrepancies in product or equipment.
  • Perform opening and closing administrative procedures.
  • Maintain equipment according to the Equipment Maintenance manual.
  • Complete duty roster tasks.
