JOB SUMMARY: To prepare ingredients, deli salads and keep salad bar full to produce attractive and healthy dishes for deli case and grab and go keeping shelves stocked to achieve department goals for sales, margin, and labor expense and customer satisfaction.

ESSENTIAL JOB FUNCTIONS:

PRODUCTION:
    • Prepare for service all food assigned on product list for deli case and grab and go case.
    • Full knowledge of all food i.e. meat, fish, vegetables, beans, grains, with the ability to follow and complete recipes.
    • Prepare and produce optimal quality of assigned range of products for deli case and grab and go.
    • Follow established record-keeping procedures and recipes to meet goals of costing and product consistency.
    • Develop familiarity with delivery schedules and appropriate locations of back stock of supplies. Ensure all stock is properly rotated.
    • Perform functional and efficient receiving procedures, checking for accuracy and quality for all produce orders.
    • Prepare salad bar items, deli salad items and raw materials for cooks as directed.
    • Maintain full understanding of daily food preparation schedules including proper cooling, handling, and storage procedures.
    • Maintain full compliance with health department regulations and perform cleaning of all items as needed.
    • Follow established procedures for sanitation, safety, and quality of prepared product
    • Maintain storage, display, and prep areas in clean, orderly condition and in good working order; report problems areas to supervisor.
    • Follow established storage and labeling procedures and proper rotation of all items.
    • Demonstrate efficient opening and closing of salad bar.
    • Keep deli case and grab and go case full, with proper signs and labels.
    • Keep salad bar full, ensuring proper signage and labeling.
    • Attend regular department and all staff meetings.
    • Demonstrate optimal standards for teamwork with other staff.
    • Participate in inventory counts as scheduled.
    • Demonstrate efficiency of the opening and closing of the salad bar.
CUSTOMER SERVICE:
  • Be clear about production schedules in order to respond to customers, know how to take special orders.
  • Ensure that customer feedback is relayed to manager
  • Prepare all catering and McCusker's Market orders as assigned.
MAINTENANCE:
  • Maintain kitchen prep areas in sanitary and orderly condition, always.
  • Clean up spills and remove trash, sweep and mop as needed, participate in dishwashing.
  • Notify manager of equipment repair and/or replacement needs.
  • Keep orderly and sweep and mop walkin fridge/freezer.
  • Move and clean behind salad refrigerator and walls.

    • Manual dexterity with hazardous equipment and ability to handle multiple demands, work long and/or irregular hours.
    • Ability to work independently and manage time productively.
