Description
The Lead Production Cook is responsible for the smooth function of the Prepared Foods kitchen during assigned shifts, and for opening or closing the department as scheduled. Shift activities include providing support to kitchen workers, ensuring execution of daily production lists, troubleshooting equipment and product quality issues, resolving customer questions and complaints, and performing the tasks of a production cook. Production Leads are an essential part of the kitchen team, providing in-the-moment leadership in alignment with department expectations, and using on-shift experience to make recommendations for improvements in department operations.
ESSENTIAL FUNCTIONS
Ensures the smooth functioning of Prepared Foods kitchen throughout the shift
- Provides in-the-moment supervision and support to kitchen staff by assisting with customer service and process adherence
- Troubleshoots equipment and product quality issues by performing basic measures according to SOPs, and escalating as appropriate
- Resolves customer questions and complaints in a way that aligns with Co-op standards for customer service, asset protection, and staff treatment
- Ensures food safety practices are followed by all department workers throughout the shift
- Follows department and store-wide SOPs to ensure security in locking and unlocking the building, performing opening and closing walk-throughs, and communicating staffing, equipment, and supply issues appropriately
- Creates Production list and outlines department workflow for scheduled shift, communicates needs to workers and adjusts as necessary
- Ensures opening and closing tasks such as cleaning, sanitation, and temperature monitoring are completed fully and on schedule
- Models execution of recipes and adherence to department standards in food production
- Models safe work behaviors
- Appropriately balances supervision with hands-on production time
- Provides training to new and advancing workers in proper behavior and techniques
- Creates and updates department SOPs, training materials, and other content as directed by the department manager
- Uses on-shift experience to recommend updates and/or changes to department processes and procedures as appropriate
- Models use of proper communication channels to raise concerns and address issues

- Wears any required uniform (nametag, apron, chef coat, etc.) so as to be easily identifiable to customers and able to work safely (hair covering, closed toed shoes, etc.)

QUALIFICATIONS (knowledge, skills, and abilities)
Preferred:
- Strong knife skills, including ability to execute specific cuts
- Experience with basic maintenance of kitchen equipment
- Experience leading a team, preferably in a commercial kitchen
- Demonstrated customer service experience
- Training in kitchen sanitation and food safety
- Basic math skills (addition, subtraction, division, multiplication).
- Excellent command of spoken and written English.
- Effective communication skills; ability to work closely and cooperatively with others.
- Ability to work effectively as a member of a team
- Knowledge of basic kitchen safety, and ability to teach others
- Time management skills sufficient to independently establish priorities and complete critical tasks in a timely manner
- Experience in a commercial kitchen environment

While performing the duties of this job, the employee is regularly required to talk or hear. The employee is frequently required to sit, stand, walk, use hands to handle, feel, and for fine manipulation. The employee is frequently required to reach with hands and arms; climb or balance; bend, stoop, kneel, crouch, or crawl. The employee must frequently lift and/or move up to 25 pounds, and occasionally lift and/or move up to 50 pounds. This job requires work in a kitchen environment, including the use of knives, cleaning chemicals such as bleach, and exposure to varied temperatures such as walk-in cooler, walk-in freezer, proximity to dish sanitizer, and proximity to commercial oven. Specific vision abilities required by this job include close vision, color vision, and ability to adjust focus. The noise level of the work environment is usually moderate. The employee must be able to maintain focus in an environment that has multiple levels of noise, and the need to prioritize demands for attention.
