Staff Accountant in San Diego duties & responsibilities:

Daily Consolidated Restaurant Performance Report (RPR): No later than 10am (M-F), a consolidated report shall be emailed to Managing Partners providing an overview of the previous day’s performance across several KPIs. To ensure timely and accurate reporting, all Restaurant General Managers (or their assigned “closer”) shall email end-of-day reports to bookkeeper no later than 9pm to provide sufficient time to consolidate the following morning and seek clarification where needed. The following KPIs shall be included in daily report:

Total Sales: (cash / credit / Hot Hold (PH only))

Labor Hours / Overtime Hours / Daily labor Percentage:

Inventory Received: ($)

Weekly Sales Reconciliation Report (SRR) Each week, bookkeeper shall perform a thorough cash and credit card reconciliation for each concept to ensure bank deposits match reported sales. Where services allow, bookkeeper shall consult POS online interface directly (versus relying on manager-reported sales) to validate reported sales and ensure that bank deposits reflect accurately in respective restaurant checking account (minus credit card processing fees etc.). Additionally, and specific to Pizza Hut NBSD, bookkeeper shall ensure that reported hot hold sales are reflected in NEXCOM ACH deposits according to NEXCOM deposit schedule. Payroll validation / processing Managers shall submit payroll hours to bookkeeper on a weekly basis. Once labor hours / employee pay rates are validated, bookkeeper shall enter hours into ADP and process in accordance with published payroll schedule. Ensuring our employees are paid accurately and on time is of the highest priority.

Monthly Profit and Loss (P&L) P&L statements for each of the below concepts shall be prepared monthly with Managing Partner review (of preceding month) occurring on the third Monday of each month. Following the monthly review and with Managing Partner concurrence / sign-off, P&L statements shall be converted to “read-only” PDF format, password protected, and archived in the appropriate Corporate Finance OneDrive folder with accurate time/date stamp. Cash Flow Projection (CFP) In conjunction with monthly profit and loss statement preparation, each month a cash flow projection shall be prepared and briefed for the following month for both Sundance Restaurants Holdings and Poggi Foods. Cash flow projections shall consider all fixed monthly cash outflows (ex. insurance, phone and internet, pro-rata salary burden etc.) in addition to thoughtful estimates for variable costs such as labor, DoD commission (aka rent), Combined Area Maintenance (CAM), food and paper, maintenance etc. Owner profit distributions shall also be identified and incorporated into monthly projection.

Quarterly Company P&L Corporate-level Profit and Loss statements shall be submitted on a quarterly basis. These consolidated P&Ls will be briefed in conjunction with restaurant-level P&L statements on the third Monday of March (Q1), June (Q2), September (Q3) and December(Q4). CPA conference Following the quarterly preparation of Corporate-level P&Ls, bookkeeper shall conduct a thorough review with CPA to promote continuity and ensure accounting methodologies are fully understood and in accordance with their guidance. Bookkeeper is expected to schedule this meeting directly and with sufficient lead-time to ensure conference occurs prior to following quarter. Estimate 1-2 hours for quarterly CPA review and ensure all previously archived deliverables are readily accessible.
