Manages the employees and activities of the bar under the direction of the Beverage Director. Ensures beverage quality, cleanliness, and guest satisfaction. ESSENTIAL FUNCTIONS AND RESPONSIBILITIES:

Communicates regularly with the Beverage Director the activities of the bar and its employees to include written reports of the activities at the Beverage Director, VP of Hotel and Beverage Operations and COO’s request
Schedule and/or monitor bartenders hours and assign duties based on business, events and specials.
Responsible for ensuring proper rotation of sections, bars and schedules for the employees without bias
Ensure that all company standards are upheld at all times without bias or prejudice.
Plan drink menus and inventory utilization based on anticipated number of guests, palatability, popularity, and costs
Organize and direct bartender training programs, resolve personnel problems, and evaluate employee performance for your department.
Ensures the over/short policy is adhered to and properly documented according to the standard operating procedure
Verify and ensure that all opening and closing check lists are being followed
Investigate and resolve complaints regarding beverage quality, guest service, or facility cleanliness
Assess staffing needs, communicate your needs to the HR Director and recruit staff when possible.
Maintain establish minimum standards for employee performance and guest service
Maintain bar and equipment inventories, and keep inventory records
Monitor employee and guest activities in order to ensure liquor regulations are obeyed
Perform some preparation or service tasks such as preparing drinks, clearing bar, and serving drinks when necessary, present bills, accept payments, and operate cash register if needed.
Prepare shift checkouts; ensure all drops for your shift are correct.
Check identification of guests in order to verify age requirements for purchase of alcohol
Attempt to limit problems and liability related to guests excessive drinking by taking steps such as persuading guests to stop drinking, or ordering taxis or other transportation for intoxicated guests
Receive beverage deliveries, checking delivery contents in order to verify product quality and quantity
Responsible for assisting in monthly, weekly or daily inventory and all spreadsheets related.
Explain how various drink menu items are prepared, describing ingredients and mixing methods
Maintain personal health and sanitation standards (wash hands when using restroom, etc.)
Review work procedures and operational problems in order to determine ways to improve service, performance, and/or safety.
Responsible for reporting all employee/guest accidents/incidents according to standard operating procedures
Maintain and over see the cleanliness/organization of the bar areas.
Communicate estimate liquor, beer, wine, and other beverage consumption in order to anticipate amounts to be purchased or requisitioned with the Commissary Manager.
Keep records required by government agencies regarding sanitation, and food or drink subsidies when appropriate
Arrange for equipment maintenance and repairs, and coordinate a variety of services such as waste removal and pest control
Assist in overall operations and day to day business.
Ensure that all standard operating procedures are followed accordingly
Address employee issues immediately in accordance with HR policies
