Sushi Cook

It is the responsibility of the Red Sushi Sushi Cook to prepare all items according to Red Sushi menu, Recipes and Plate Specifications, and guest requests. To assist Executive Chef or Chef in all phases of kitchen production and is typically the Inside Expo. To instruct Cooks and food prep helpers in proper cooking skills and techniques.

Responsibilities:

Must work as a team; helping fellow employees and managers to ensure the finest possible service is given to our guests
Clean and prepare fish, vegetables, chicken, and beef.
Cook for fried, grilled and sauts food.
Prepare different sauces.
Trim different fish.
Set up for preparation station.
Stock items and shelve all food product.
Maintain uniform appearance according to established guidelines.
Adhere to policies and procedures and Health regulations.
Work rapidly and accurately.
Responsible for properly controlling the normal operation of assigned station. Determine and produce according to par levels.
Use proper food handling techniques when preparing food.
Responsible for following recipes.
Be capable of working all stations as needed.
Be capable of preparing and cooking all menu items as needed.
Know proper presentation and garnishing of all menu items.
Assist in preparation areas as needed.
Assist Room Chef or Assistant Chef with training cooks and Food Prep Helpers.
Notify Room Chef or Assistant Chef of any needed supplies.
Notify Room Chef or Assistant Chef of any problems that arise.
Assist with maintaining a neat, clean and safe working environment.
Turnover/takeover station according to established procedures.
Perform other work as assigned.

Qualifications:
  • Must possess good memory and the ability to recall recipes.
  • Knowledge of kitchen equipment and knife skills.
  • Good people skills and a well-groomed appearance.
  • Minimum one year high volume cooking experience, preferably in a Hotel/Casino environment.
  • Minimum age requirement is 18
