JOB GOAL
To work closely with the Director of Food Services to provide balanced nutritious meals to District students.

ESSENTIAL FUNCTIONS
Assumes responsibility for the daily operations and supervision of the kitchen and for presentation of physical cafeterias and the appearance and taste of all foods prepared.

Complies with all applicable federal, state and local laws and regulations and District policies and administrative regulations.

Cooperates with the building principal to coordinate the lunch and breakfast service with the educational program.

Exercises managerial skills to control labor, food and non-food costs. Plans the amounts of food to prepare for all food items on the menu using menus provided by the Director of Food Services; monitors inventory values - USDA/Commercial; and places orders for all foods per plan from vendors who were successful bidders; verifies orders prior to signing any receipts; and returns all invoices to the Director of Food Services.

Supervises the preparation of menus without deviation and according to government nutritional standards.

Keeps refrigerators, freezers, and storerooms in good order and records daily temperatures and reports malfunction of equipment to the Director of Food Services.

Supervises all unit employees and their workstations, finding substitutes when necessary; maintains and updates daily task lists of unit employees; and assigns staff to positions, working hours and duties based on daily schedule, special needs or absences. Complete unit employee evaluation reports.

Directs sanitation and all Hazard Analysis & Critical Control Points (HACCP) record-keeping procedures.

Immediately reports any accident or problem occurring in the kitchen or cafeteria to the Director of Food Services or designee.

In coordination with the Director of Food Services, ensures each staff person is notified of attends the required number of hours of professional development for all Food Service workers and meets requirements for own professional development. Provides and coordinates training for new employees on a day to day basis including care and use of equipment.

Maintains daily time sheet for employees and submits bi-weekly payroll sheets to the cafeteria office.

Supervises and plans all special functions with the Director of Food Services, administration and staff during normal work day.

Rotates assignments for special evening functions. Prepares "catering invoice" for special events.

Accurately, neatly and correctly prepares all inventory records of food and supplies, sales activity reports, bank deposits, and daily production sheets.

Performs point of sale processes according to established procedures and counts each cashier's drawer and prepares for daily deposit.
