DUTIES AND RESPONSIBILITIES:

Demonstrates Competency in the Following Areas:

Hire, train, and supervise personnel in the dietary department, to include, but not limited to, cleaning, cooking, inventory control, portion control, and plate presentation.

Plan and direct activities of the dietary staff in accordance with state regulations and Community's policies and procedures without exceeding FTE budget guidelines. Prepare department scheduling to ensure coverage and take call to resolve any unplanned scheduling emergencies.

Coordinate weekly menus with activity and marketing functions

Prepare meals in accordance with planned menus

Maintain and set up food production and quality control of night operation in the Dining Room

Make sure dining room is fully stocked for the next day.

Adhere to the portion control standards for nutrition

Follow the policies and procedures for safe food handling and storage.

Perform all tasks in accordance with the established standards for sanitation & safety.

Clean and assemble work area; Make daily inspections of workstations to ensure that sanitation guidelines are being followed.

Maintain excellent personal hygiene in accordance with established policies and procedures.

Control food costs and waste while maintaining first rate food quality to the satisfaction of the residents. Check and report food supply issues and concerns

Promptly reports all hazardous conditions, equipment, accidents and incidents to the Executive Director.

Dispose of food and waste in accordance with the established policies and procedures.

Ensure that menus are maintained and filed in accordance with established procedures.

Enhances our food service program by preparing homemade desserts, breads, and pastries.

Assist in inventorying and storing incoming foods, supplies and equipment and recommend to the Executive Director, the equipment and supply needs of the department.

Any other tasks, assignments, projects or requests as deemed by management.

Attend and participate in orientation, training, and in-service educational activities.

Participate in resident service plan meetings according to community policy.

Develop and maintain a good working rapport with personnel to ensure that the food service staff works as a team.

Demonstrates ability to remain calm in emergency and/or stressful situations and gives everyone a feeling of confidence that the situation is under control.

Visit new residents within 3 days and other residents monthly.

Ability to deal effectively with employees and residents during conflicts or stressful situations.

Professional Requirements:

Adheres to dress code, appearance is neat and clean.

Completes annual education requirements.

Maintains regulatory requirements.

Maintains resident confidentiality at all times.

Reports to work on time and as scheduled, completes work within designated time.

Wears identification while on duty

Completes inservices and returns in a timely fashion.

Attends annual review and department inservices, as scheduled.

Attends monthly staff meetings.

Represents the organization in a positive and professional manner.

Actively participates in performance improvement and continuous quality improvement (CQI) activities.

Complies with all organizational policies regarding ethical business practices.

Communicates the mission, ethics and goals of the facility.

Regulatory Requirements:
  • Must be 21 years of age or older
  • An accredited Dietary Manager or current enrollment in a dietary program preferred

QUALIFICATIONS:
  • High School graduate or equivalent; college preferred
  • Previous supervisory experience required
  • Must have thorough knowledge of dietetics nutrition, food production systems and purchasing
  • Patience, tact, enthusiasm and positive attitude toward the elderly
  • Good physical and mental health, neat, clean, well groomed and responsible
  • Must have upper body strength adequate to bend, lift, shift, move, and/or assist in moving articles of more than twenty-five pounds.
  • Must be able to squat, reach, and stretch without distress. Must be able to tolerate extended periods of walking and standing
  • Must have working knowledge of; Microsoft, Copier, Scanner, and Shredder

Language Skills:
  • Able to communicate effectively in English, both verbally and in writing.
  • Additional languages preferred.

Skills:
  • Basic computer knowledge.
