Extensive Culinary experience required. Responsible for ensuring the success of the team by helping the Banquet Chef with all plate ups or additional tasks. Ensure the planning for promotional events is correct. To ensure each employee will be able to follow established recipe and plating guide provided to exact specification. Creation of daily specials, lunch buffet menus, and brunch menus Maintain and contribute to a positive work environment. Assist in the controlling food and labor cost.

Prepares salads, fruits, vegetables, cold meats, fish items, canapes, cold hors d'oeuvres, appetizers and
other cold dishes.
Prepares all pantry food items according to standard pantry recipes or, as otherwise specified by
supervisor, to ensure consistency of product to the guest; requires transportation of heavy food products.
Checks and controls the proper storage of product, especially on all fresh produce, checking on portion
control, to maintain quality product.
Keeps all refrigeration, storage, and working areas in clean, working condition in order to comply with
Health Department regulations.
Ensures that all equipment in working areas is clean and in proper working condition to comply with
Health Department regulations.
Visually inspects, selects and uses only the freshest fruits, vegetables, meats and other food products of
the highest standard in the preparation of all menu items. Reads and employs math skills for following
recipes. Prepares requisition for supplies and food items for production in workstation.
Perform any general cleaning tasks using standard hotel cleaning products as assigned by supervisor to
adhere to health standards.
Perform other duties as requested, such as cleaning up unexpected spills, or executing special guest
requests.

Tasks:
Inspect and clean food preparation areas, such as equipment and work surfaces, or serving areas to ensure
safe and sanitary food-handling practices.
Ensure food is stored and cooked at correct temperature by regulating temperature.
Ensure freshness of food and ingredients by checking for quality, keeping track of old and new items,
and rotating stock.
Season and cook food according to recipes or personal judgment and experience.
This job requires work in and out of walk in coolers and freezers where temperatures reach below 0
degrees. Extremes in temperature are likely. Extreme is defined as changes in temperature sufficient to
cause marked bodily discomfort unless the worker is provided with exceptional protection.


Knowledge:
Food Production - Knowledge of techniques and equipment for planting, growing, and harvesting food
products (both plant and animal) for consumption, including storage/handling techniques.
Education and Training - Any combination of education, training or experience that provides the
required knowledge, skills and abilities. High school diploma preferred. Culinary or Apprenticeship
