Overview

Otterbein operates ten Senior Life Communities in the western region of Ohio and Indianapolis providing extensive kitchen and dining facilities tailored to meet the needs of Independent Living, Assisted Living, Skilled Nursing, and Rehab residents. The Chef Transition Leader will collaborate closely with Otterbein Ministries, working alongside Executive Directors and Executive Chefs. The location and duties will be flexible based on the needs of the communities. Primary role will be filling daily open cook/sous chef positions; as needed, Chef Transition Leader will temporarily fill open management positions.

Responsibilities:

  • Work as a cook/sous chef daily to fill positions Culinary Supervisor Duties
  • Provide short-term assistance for Executive Chef or Director of Culinary Services.
  • Plan, organize and implement Culinary Services for all levels of care as a working supervisor
  • Oversee, prepare, and creatively craft a variety of food offerings
  • Prepare menus that feature balanced meals, appetizing foods and plate appearance
  • Help develop and maintain policies and procedures in providing Culinary Service
  • Support the ordering and purchasing of food and supplies, ensuring organized, systematic and safe storage
  • Support hiring and development of Culinary Service employees
  • Schedule adequate Culinary Services employees to accomplish preparation, serving and cleaning of the kitchen and serving areas
  • Develops and implements HAACP procedures to maintain food safety in all areas of production (are they really doing this or just ensuing food safety)
  • Works within the Culinary Services budget and monitors expenses
  • Support and help educate employees including regular Culinary team meetings

Travel: up to 100% depending on transition needs.

  • Lodging provided if over 2 hour commute from home.
  • Mileage stipend provided

Experience & Qualifications:

  • Education: High School Diploma; Associates or Bachelors a plus Culinary Degree preferred
  • Certification: Dietary Manager Certification; ServSafe Certified required
  • Experience: Minimum of three years management experience in dining, catering, restaurant and/or cooking field, preferably in the health care environment and/or restaurant setting. Experience with budget control and stock management.
