Meat Specialist

POSITION SUMMARY

  • Responsible for the profitability of the meat operation within the company policy along with the Meat Director.

ESSENTIAL FUNCTIONS

  • Be responsible to work within meat operations budget as far as gross profit and meat distribution.
  • Investigate and resolve complaints regarding food quality, service, or accommodations.
  • Perform specific tasks as assigned by the meat director.
  • Monitor food preparation methods, portion sizes, and garnishing and presentation of food to ensure that food is prepared and presented in an acceptable manner.
  • Monitor budgets and review financial transactions to ensure that expenditures are authorized and budgeted.
  • Develop, support, motivate and direct all meat employees in a manner to achieve maximum sales, profits and customer satisfaction and the operating budget for the meat department.
  • Ensure employees know, understand and follow through with effective meat programs such as safety, sanitation, training, processing, pricing, displaying, merchandising, weights & tares, scanning, employee relations, receiving, record keeping, refrigeration, inventory and customer service programs as set forth by meat director for all meat department.
  • Communicate between upper management to store level meat operations the company vision and day-to-day information as it applies to meat operations.
  • Responsible for overseeing the hiring, interviewing, training, demoting, promoting, terminating, wage reviews, transfers and labor set-up for all meat departments.
  • Establish standards for personnel performance and customer service.
  • Estimate food and other consumption to anticipate amounts to be purchased requisitioned.
  • Review work procedures and operational problems to determine ways to improve service, performance, or safety.
  • Training, growing and mentoring meat managers in developing their leadership skills.
  • Maintain food and equipment inventories and keep inventory records.
  • Organize and direct worker training programs, resolve personnel problems, hire new staff, and evaluate employee performance.
  • Order and purchase equipment and supplies.
  • Monitor meat department paperwork and records.
  • Monitoring and insuring accurate bookkeeping systems as far as weekly meat purchases and monthly meat purchases.
  • Monitoring records to control shrink through inventory and ordering.
  • Arrange equipment maintenance and repairs and coordinate a variety of services.
  • Monitor employee and patron activities to control shrink.
  • Monitoring a four-week period meat inventory.
  • Monitoring all credits and ensuring that they are called into warehouse on a timely basis as outlined by warehouse.
  • Constantly measuring the performance in sales, cost control, shrink, labor and gross profit of meat departments and evaluating as well as taking corrective action when necessary.
  • Working with district manager, store manager, meat director, meat manager and store team to achieve overall goals of each store.
