Job DescriptionJob DescriptionSummary/ Objective

The Fermenter Room Operator is responsible for delivering mash at controlled temperatures to each fermenter as scheduled and move the fermented mash to the beer well for distillation.

Essential Functions

Time Allocation

  1. Major Responsibilities 90%

General Duties:

  • Communicate with Distillery Key Operators to ensure that fermenters are filled and emptied in order to maintain the monthly production schedule
  • Maintain a clean work area
  • Clean walk areas
  • Clean under fermenters
  • Clean Spills or fermenter leaks from floor daily
  • Effectively Communicate with all staff including co-workers and direct supervisors by both oral and written means

Drop Tub Control:

  • Communicate with Distillery Control room to receive Mashes
  • Setup Drop tubs water and back set amounts
  • Send Drop tub Mashes to Cooling banks
  • Send Drop tub to the correct fermenters
  • Clean Drop tub regularly

Fermentation and Fermenter control:

  • Monitor fermenter activities while on shift by
    1. checking fermenter temperatures
    2. Collecting fermenter samples
    3. Performing analytical laboratory tests
    4. Recording data in fermentation logbook
    5. Adjusting backset to keep fermenter set pH in the acceptable range.
    6. Collecting and properly labeling drop samples for use by plant Lab. technician in HPLC analysis
  • Hose out, tarp and steam fermenters between fills.
  • Perform caustic and hot flush cleanups in fermenter room.
  • Compute beer gallons and % backset for each fermenter and record that data in fermentation logbook.
  • Record operational activities and fermenter status in Fermentation Logbook & Ignition Software System.
  • Maintain clean and organized work area and keep fermentation room clean to the standards set forth by management, and to the level of a food grade facility

Fermentation Sampling and Data:

  • Track Fermentation cycle from Set, 24-hour, 48-hour, and drop data
  • Enter data in ignition, and Fermenter operator logbook
  • Perform tests on:
    1. Balling – Sugar density in mash or fermentation
    2. pH – show the concentration of H± ions in solution, gives and indication fermenter health
    3. Total Acids - Total acidity is the total amount of organic acids in

the sample. This includes all weak beer acids (i.e.

lactic, acetic, succinic, tartaric)

  • Enter test data into ignition system
  • Inform management when a fermenter is out of specification.

Safety & Compliance

  • Abide by all EPA and OSHA rules and regulations
  • Follows all applicable safety rules for assigned duties including reporting any work-related injury at the time of injury to the supervisor.
  • Operates equipment in a safe manner — considering persons, buildings, or other equipment that might be endangered or damaged because of negligence.

Other Duties as Assigned

All of the above responsibilities are performed by the Fermenter Room Operator however, the Fermenter Room Operator can be responsible for other requirements that may be assigned by management personnel.

Qualifications

1. Required Competencies

  • Must have excellent interpersonal skills with ability to communicate all levels of employees/staff/vendors/visitors.
  • Strong organizational skills, the ability to handle multiple tasks simultaneously.
  • Maintain flexibility as necessary.
  • Ability to build and maintain positive relationships.
  • Must promote and participate in a teamwork approach in regard to union, non-union and management.
  • Ability to adjust work schedule and work overtime as required to maintain an efficient operation and meet weekly/daily work schedules
  • Ability to assist in identifying potential problems and submitting either work orders or suggestions to deter interruptions in the manufacturing program
  • Report Operational mistakes or irregularities.

2. Education and Experience - Required

  • Must be 21 years of age
  • High School Diploma
  • Ability to perform basic mathematical calculations such as:
    1. Addition / Subtraction
    2. Multiplication / Division
    3. Decimals / Fractions

3. Education and Experience - Preferred

  • Pervious manufacturing experience
  • Good mechanical skills
  • Good understanding of liquid movements, piping, valves, etc.

Job Related Information

Supervisory Responsibility - The Fermenter Room Operator has no direct reports.


Work Environment - This job operates in the distillery fermenter control room and fermenter room, and cooling banks


Travel - Travel may be required between Kentucky locations.


Physical Demands - The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. While performing the duties of this job, the employee is regularly required to talk or hear. The employee frequently is required to stand; walk; use hands to handle or feel; and reach with hands and arms. The employee is occasionally required to sit; climb or balance; and stoop, kneel, crouch or crawl. The employee must frequently lift and/or move up to 10 pounds and occasionally lift and/or move up to 50 pounds. Employee will be required to move fill pipes and valve handles on fermenters and fill lines. Employee must be able to move drape tarps for steaming purposes and insert spargers and water hoses in fermenters. Employee may occasionally walk on catwalks on go into confined spaces. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus.
