Job Summary

The Chef de Cuisine aka a la carte Sous Chef, will be responsible for daily a la carte dining in the back of house. This person will lead and grow our a la carte program to success by a commitment to member needs, supervising tenured teams, providing consistently great dining experiences, and collaborating with a team of dedicated professionals. Our Club is open 6 days a week, 12 months a year, with various seasonal adjustments. 6 of Woodstock’s previous 7 Sous Chefs moved on to Executive Chef positions.

 

Education and/or Experience

·     5 years in a food preparation position encompassing all phases of food preparation and kitchen operation is required.

·     While not required, special consideration will be given to candidates with

    • a degree from a culinary arts program,
    • experience with culinary apprenticeships,
    • demonstrable accreditations or achievements in culinary and hospitality industries
    • the ability to communicate with English and Spanish speaking team members

 

Job Knowledge, Core Competencies and Expectations

·     Ability to effectively lead, communicate with and supervise all kitchen team members

·     Has experience writing menus with consideration for clients with a wide range of expectations.

·     Is a flexible problem solver

·     Is able to teach others with a high degree of detail and commitment

·     Is proficient with PC and Microsoft Software

·     Awareness of occupational hazards and safety precautions; skilled in following safety practices and recognizing hazards.

Job Tasks/Duties

·    Creates and manages systems that support the daily a la carte operation including creating menus with standard recipes, building applicable par level & mise en place lists, staff training materials and schedules

·    Assists in the development of the various a la carte and banquet menus

·    Assists with monthly inventories, pricing, cost controls, requisitioning and issuing for food production.

·    Manages daily a la carte kitchen operations overseeing service.

·    May act as a line cook, an expo or in an oversight position and will be able to know and or plan when this takes place

·    Will be a key holder for the club; may be required to open and/or close the Club depending on schedule

·    Assists other Sous and Executive Chefs with supervision and training of employees, sanitation and safety, menu planning and related production activities.

·    Consistently maintains standards of quality, cost, presentation and flavor of foods.

·    Ensures proper staffing for maximum productivity and high standards of quality; controls food and payroll costs to achieve maximum profitability.

·    Makes recommendations for maintenance, repair and upkeep of the kitchen and its equipment.

·    Prepares reports, arranges employee schedules, costs menus and performs other administrative duties as assigned by the Executive Chef.

·    Assists Sous and Executive Chefs with personnel hiring, training, evaluations, firing, benefits, etc.

·    Assists in maintaining security of kitchen, including equipment and food and supply inventories.

·    Assists in food procurement, delivery, storage and issuing of food items.

·    May coordinate & prepare banquets and buffets

·    Reports all member and guest complaints to the chef and assists in resolving complaints.

·    Monitors kitchen employees’ time sheets to ensure compliance with posted schedules.

·    Submits ideas for future goals, operational improvements and personnel management to Executive Chef.

·    Understands and consistently follows proper sanitation practices including those for personal hygiene.

·    Works with various interdepartmental staff and attends daily line-ups, weekly F&B meetings, Dining committee meetings and others as needed.

·    Performs other appropriate tasks assigned by the Executive Chef.

 

 

 Licenses and Special Requirements

·    Food safety certification.

 

Physical Demands and Work Environment

·    Required to stand for long periods and walk, climb stairs, balance, stoop, kneel, crouch, bend, stretch and twist or reach.

·    Push, pull or lift up to 50 pounds.

·    Continuous repetitive motions.

·    Work in hot, humid and noisy environments.
