Marine Ventures International, Inc. (MVI) is a marine science and technical services consulting firm that provides environmental services worldwide.
MVI has an exciting opportunity for a Cook/Steward to hold a critical position aboard the INDEPENDENCE and is a focal point of crew and customer interactions. It entails a high degree of responsibility to manage the provisions procurement, menus, galley, mess deck, dry stores, and sanitation, in addition to the preparation and service of all meals.
Direct Supervisor: Chief Mate and/or Captain for all work performed.
LOCATION: Port Hueneme, CA
JOB STATUS: Non Exempt, Full-time rotation position of 30 days on and 30 days off
SECURITY CLEARANCE: Must have or obtain a Top Secret clearance.
REQUIRED QUALIFICATIONS: USCG food handler endorsement
EXPERIENCE LEVEL: Must have knowledge of ship operations.
EDUCATION: High School Diploma or equivalent.
- Requires a minimum of 4 years’ experience in at-sea food preparation and planning.
- Candidate is required to have a basic knowledge of seamanship, operating ship's winches and cranes, as well as loading procedures and ship's safety.
- Must poses an MMD with a food handlers’ endorsement
CERTIFICATIONS AND TOOLS:
- EXPERIENCE LEVEL: Requires a minimum of 4 years’ experience in at-sea food preparation and planning.
- U.S. Merchant Mariner’s Credential (MMC)
- Standards of Training, Certification and Watchkeeping for Seafarers (STWC)
- Transportation Worker Identification Credential (TWIC)
OTHER QUALIFICATIONS / SKILLS:
RESPONSIBILITIES:
The Cook/Steward coordinates activities of the following functions:
Functionally, the successful candidate will:
- Preparation of menus, purchase requisitions and upon approval, ordering of provisions and stores. Including documentation of expenditures, annual meals served, vendor and price comparisons, and maintenance of provision budgets. Menus are to be balanced and displayed at least one day in advance in the mess deck.
- The proper stowage of all food and non-food. This duty encompasses monitoring of all reefers and freezers for proper temperatures, the stowage of provisions to prevent shifting underway, pest control and interior space temperature control.
- Preparation and serving of meals to all crew and customers. Preparation of three balanced meals, with dessert at dinner.
- Maintenance of Galley, Dry Stores and Mess Deck areas. Duties include sweeping, swabbing and cleaning of all fixtures, bulkheads, tables, chairs, decks, counter tops, coffee and soda areas, cabinets, shelving, refrigerators, walk-ins and galley equipment.
- Restocking of condiments, napkins, cups, utensils, ice in soda machine, and all consumables in the mess deck area.
- Performance of preventative maintenance and cleaning tasks as directed by Chief Mate.
- The maintenance of a disposal log.
- The removal of trash from the mess deck, lounge, galley and dry stores.
- The sanitation of the 01-deck trash dumpster. Responsible for the dumping of trash in port. Including ash from the BBQ, cardboard from dry stores and food wastes.
- Other duties as directed, including but not limited to, in port watches, assistance with mooring, unmooring, deck operations and small boat recovery.
- Consult with the Master for menus and budget related issues.
- Menus are to be prepared by Cook/ Steward and approved by Master.
- Mealtimes are to be approved by the Master and will generally be an hour in duration.
