Job Summary
Sunrise Kitchens is a proprietary brand name that represents the catering and food service departments, as well as all other store prepared/value added food items sold across Sunrise ShopRite, and is a major point of competitive differentiation for the company. The Sunrise Kitchens Executive Chef is the creative force behind Sunrise Kitchens and as such is responsible for the continuous development of new items that enable the company to stay on the leading edge in our marketplace. The Sunrise Kitchens Executive Chef is the face of the company for all major catering and special events and must handle each client with the utmost care and attention to detail. The Executive Chef is responsible for mentoring and training Associates throughout the store to execute all Sunrise Kitchens items including but not limited to seasonal items, Holiday menus, daily specials, etc. The Executive Chef works closely with the Food Service, Bakery, Seafood, Meat and Produce departments, as well as Store Management to ensure that the vision for Sunrise Kitchens is executed smoothly throughout the store. The ideal candidate will use their passion for culinary excellence and leadership skills to facilitate and inspire quality food production and support execution. Food Safety is critical to Sunrise Kitchens and as such is a major focus for this position.

- College degree a plus but not required
- Food prep experience of 5 plus years - experience in supermarket industry a plus

Key Responsibilities
- Partner with Director of Sunrise Kitchens and Community Engagement to build Sunrise Kitchens as a leading food service and catering brand in NJ.
- Continuous development of new items, taking into account Sunrise Kitchens’ clean ingredient objectives, as well as current food trends and competitive offerings.
- Develop both item and menu recipes ensuring that accurate product and labor costing, as well as shrink control measures are in place
- Continuously evaluate suppliers to ensure high quality ingredients at lowest possible costs to ensure the achievement of departmental gross profit.
- Implement training at department level to enable all Sunrise Kitchens Associates to manufacture current items and ensure consistency.
- Work with Branding Coordinator to ensure all Sunrise Kitchens items as well as signs and labels are in compliance with all internal and external labeling regulations including but not limited to menu/allergen labeling and the Sunrise Kitchens Shelf2Cart labeling system.
- Work with Branding Coordinator to ensure accurate item maintenance in all internal systems including but not limited to Recipe Management and Order Express
- Responsible for the coordination and execution for large scale events.
- Conduct job skills assessments on potential Associates as well as for the development of existing ones.
- Create seasonal retail items, Holiday packages and Custom Catering menus and communicate/enable Catering Coordinators, Chefs, Kitchen Managers and staff to execute.
- Create customized offerings for customers which cover allergies, vegan/vegetarian, low carb and other special dietary concerns.
- Strong understanding of local, state and federal laws round food handling, food safety and preparation.
Key Deliverables
- Build high performance teams that deliver a “best in class” prepared food offering in all Sunrise ShopRite stores.
- Working with Director of Sunrise Kitchens and Store Management team, ensure proper execution of food packaging and menu labeling standards.
- Have defined and clearly articulated processes for the execution of all Sunrise Kitchens items prepared throughout the store.
- Be fully compliant with internal and government regulations and policies
- Increase sales and profitability of Sunrise Kitchens operations by consistently evolving assortment to stay cutting edge while maximizing gross profit and minimizing labor and shrink.
- Assist in succession planning for key Sunrise Kitchens positions across the organization
