About the Role


As the Executive Chef for Seed Kitchen & Bar / Stem Wine Bar, you will be responsible for executing our cuisine at a very high level to our exacting standards daily and managing the efficiency of a team of line cooks, prep cooks and dishwashers. The Executive Chef ensures that all standards for food safety, quality control, portion control and cost controls are met and maintained.

Seed Kitchen & Bar is a modern American neighborhood restaurant located in the East Cobb community of Marietta, Georgia. Seed is open daily for lunch and dinner, and brunch on Sundays. Opened since fall of 2011, Seed has been the premiere restaurant in the East Cobb neighborhood for local, seasonal fare, exciting cocktails and an ever evolving wine program. Right next door is our sister restaurant, Stem Wine Bar, offering Tapas style dining and weekly wine tasting events.

Responsibilities


  • Lead and manage a kitchen team of 20+
  • Develop seasonal menu changes utilizing local and regional ingredients
  • Ensure recipes are being followed accurately
  • Know each menu item thoroughly and can advise on allergy concerns.
  • Complete daily line checks and taste to ensure sauces, soups and menu items are correct.
  • Collaboratively work with the kitchen team, creates daily specials
  • Expedite timely food service and quality control
  • Ensure that food products are portioned prior to cooking following standard portion sizes and recipe specifications.
  • Ensure the team adhere to the standard operating procedures, including opening and closing checklists
  • Lead a daily pre shift with the kitchen team to communicate specials, issues, address areas of improvement, and recognize good performance. Communicate features to the FOH team.
  • Maintains a clean and safe work environment
  • Effectively and professionally communicate with front and back of the house team members.
  • Provide training of every station and recipe and thoroughly trains all new hires and continually retrains as needed.
  • Ensure that everyone on the team strictly adheres to Cobb County Food Safety Regulations
  • Labor Cost Control – is responsible for writing the weekly kitchen and BOH manager schedule within budget, able to effectively handle scheduling conflicts on the fly and personal requests.
  • Food Cost Control – is aware of and able to purchase within the food cost budget
  • Inventory – responsible for overseeing and monitoring the completion of weekly inventory



Qualifications



5+ years of kitchen management experience


Associate's degree in Culinary Arts and/or Bachelor's degree in hospitality related field, or demonstrated relevant experience in professional kitchens



Experience in leading and supervising kitchen teams



Experience working within budget constraints



Serv Safe Certified (or able to obtain within 30 days of hire)
