To assist in the planning preparation and service of quality food to students and other activities related to food service in a quick and pleasant manner. Reports to
Director of Food Service Qualifications/Requirements
- High school diploma or general education degree (GED).
- Previous experience with large scale cooking/baking and food preparation/serving.
- Plans and prepares quality food items following recipes or written instructions to meet all production schedules. Serves meals using correct portioning and meeting USDA minimum standards and health regulations.
- Completes training in food safety including ServSafe, Employee Environmental training, food allergies, USDA regulations and school policies.
- Knowledge and ability for time and temperature control.
- Ability to ensure proper food presentation and standard portion control.
- Ability to review the menu at least five days in advance and cross check with food inventory and order accordingly.
- Orders and puts away products needed, rotates inventory; plans use of leftovers.
- Reports inferior quality of food or faulty equipment to the appropriate authority.
- Prepares food according to a planned menu and tested, uniform recipes, and determines if the finished product is of best quality both in flavor and appearance before it is served.
- Able to successfully handle recipe modification to include the lowering of fat, sugar and salt content.
- Interpret and apply production records from menus for daily preparation, checking for any discrepancies.
- Verify production counts and adjust to fit daily lunch counts, utilizing all products available to avoid over or under production.
- Maintains production records; records what is sent to each kitchen.
- Safely and efficiently operate and work around commercial food preparation equipment.
- Assists with the daily cleaning of all kitchen equipment to ensure cleanliness and sanitary conditions are met.
- The employee must be able to lift and/or move up to 50 pounds daily, such as milk crates, frozen foods, canned food, etc.
Per DESPA Union Contract - This a union position. Work Schedule
3.75 hours per work day
FLSA - This will be non-exempt
