Job Description:
- Direct the restaurant Pastry Chefs in all areas that impact pastry products, safety, sustainability, and profitability
- Assist and collaborate with the Culinary team to develop pastry menus and programs, as well as development of special, seasonal and/or market specific menu items in a costeffective manner
- Execute regular meetings with the restaurant's pastry team to ensure product satisfaction and customer needs are being exceeded
- Work to continually increase revenue through create problem solving and innovative methods of menu development
- Responsible for product evaluation, examining the viability of each item through several testing criteria
- Monitor portion sizes and production quantities to minimize waste and optimize inventory management.
- Hire, develop and mentor the pastry leadership team through training, clear communication, constructive feedback, and performance reviews.
- Maintain and demonstrate strong knowledge of pastry/food and beverage trends within the hospitality industry
- Train Pastry Chefs on specific pastry rollouts and ensure standards are being met
- Build and create a brand identity for the pastry program
- Adapt to meet the changing needs of the restaurants and guests
- Maintain a level of professionalism and communicate effectively
- Be considerate and willing to help out fellow teammates
- Ability to work calmly and efficiently during busy periods
- Assist with service in the various restaurants; prepping ingredients, preparing orders, maintaining cleanliness, and other duties to assist the team
- Other tasks as assigned
- Qualifications:
- Culinary degree or equivalent experience
- 23 years of pastry chef experience in a highvolume fullservice restaurant
- Ability to lead and manage the kitchen staff
- Creative problemsolving abilities
- Uptodate with industry trends
- Professional demeanor and flexibility with schedule
